There's a taco truck in Chico CA that has a burrito they call the Chico burrito. It's very similar to this except it's with whatever meat you choose and they add nacho cheese. I order it dumpster style (pollo, carne asada, al pastor and chorizo) best burrito I've ever had.
Matt, you never cease to amaze me with what you make. This was a super simple recipe. Love the behind the scenes footage at the end of the video...we all have moments like that but are rarely shown. One more thing...I'm with you 100% on the Kirkland foil. Any of us that do a lot of cooking, smoking or grilling need this big roll of foil. It's all I use and 1 big roll will last me one whole summer...love the stuff 🙂
Migas would be just cut up corn tortillas, fried up with egg. What you did there is known as "migas locas" (crazy migas) where you would add the a la mexican part, (tomato, onion & jalapeno), with the chorizo and cheese. Very common breakfast dish in south Texas. You should try machacado a la mexican as well. Very good stuff! Cheers!
@@FaitMaker Using cheese makes it chilaquiles then you add a protein, most of the time shredded chicken, with or without egg. There are many versions, but the TexMex one is the most popular.
Put a slice of aluminum, then parchment paper then the ingredients. In that way when it steams it won’t stick to the foil. Give me some Mexican fried rice or refried beans, and you got me!!!👍👍👍I would put the shredded cheese on the tortilla then add ingredients. Nice and gooey!!😛😋🤤
Totally different from the way we grew up making migas. We always just triangled & sliced up corn tortillas, cooked and scrambled the chorizo, eggs & tortillas all together & topped with pico or salsa. Nevermind made it like a burrito.

First thing is that you dhould get a better source to reference in your video. Migas Tacos are a hispanic breakfast food... in my experience throughout the hispanic community. find yourself a hispanic cooking youtube channel to find the correct way to cook migas and the proper way to say the name of the taco. You did a disservice to my heritage. Also, everyone knows that San Antonio has better tacos than Austin.
Dang fella. Sounds like someone from Austin did you wrong. Hey, take a deep breath, and let it out. These aren’t meant to be authentic. The chorizo in it excluded that and believe I noted. This was a recipe someone got from Austin. People do things differently , even different Hispanic families do things differently. This is what I wanted to do and put my spin on it. Get your channel up and going and make you San Antonio authentic Migas and see how it goes.
@@thehungryhussey there has been a long standing feud between Austin and San Antonio about who has the best breakfast tacos. When using unbiased judges, San Antonio always wins. Being Hispanic myself, I have been on the receiving end of great images tacos. My grandma used to dice up some bacon and fried it , then threw the cut up corn tortillas in the grease until they got crunchy, and then would mix in the bacon and eggs in the mix. Like you said, it’s a texture thing so wrapping the tacos up is discouraged,,, you don’t want the crispness of the corn tortillas to get soggy.
Had migas in several restaurants years ago when in Austin TX. They were plated vs. tacos

My understanding of a miga is that it is fried tortilla strips. Using tortilla chips would make it a "chilaquiles miga".

Migas have been around since i was a kid, So much you can so with them.
I love migas. Never thought to put them in a tortilla and making them into a taco/burrito.

This is an awesome thing to eat but when I make them I also add one of two things, either Valetta cheese or creamy queso cheese.
