    Made these several times. Sear your meat! Cube up the roast, salt and pepper, then sear before throwing in the pressure cooker. Dip the tortillas in the juice before building your tacos. Then after cooking, open the tacos to add cilantro and white onion. My kids and I love birria tacos!!! BTW, hello from the other side of Trinity

      Haha.. Other side of Trinity! Nice! I think next time I will sear my meat just to add some flavor or even a little smoke before too. Most of the recipes, and this one from La Captail didn't sear.

    These tacos are quesabirria tacos. You also put consume in cup and add some meat, onions, cilantro & red salsa. You eat your quesabirria with consume. Very popular tacos. Thank. Good job

    Try dipping the tortilla in the sauce, both sides before placing them on the griddle.... and always use corn tortillas for birria.

    YOOOO HH! I dont understand the recent popularity about these tacos. Especially in Cali. But to me they just taste like spiced up pot roast meat tacos. But in Cali its STILL about the carne asada tacos!! All the way from the West Coast, you got me SPRUNG!!!

    Excellent. Birria is a labor of love. Well worth the time and effort.
    I make the meat the day ahead of time - and have everything is ready to go for large parties.
    It's corn tortillas for us - dip those tortillas in the consommé, onto the hot griddle, flip, fill and crisp up. Delicious.
    Beware of those chipotle in adobo sauce - they pack a punch.
    Some finely shredded cabbage and radishes to top the consommé is fabulous.
    BTW - why does the Mid-West, the land of corn, not have corn tortillas?
    I was in Des Moines for recipe development and there was not a corn tortilla in sight.
    Well done on the Beef Birria - pork works well too!

    This was a fun video! I have had the pleasure of Cooking with the Schmidt (see what I did there) and it was so much fun. MAN, them Birria tacos looked amazing. I have not tried to make them yet, but I really need to, they look like they are packed with flavor!!! Great job guys!

      I’m from the Central Valley of California and believe me there’s so much good birria and Mexican food in general around here it’ll make your head spin.
      Homemade always where it’s at though. I can make anything better or as good as the best at home it seems.

    How cool to see the Schmidt on your set Hus. I can't imagine how good those Birrias' are. I'll continue using canned/pre made ingredients and be eatin' my tacos in less then 30 minutes tho bro (I thro in some home grown peppers and such, and some of the canned sauces.....dang, they good).     Should have seared the meat first, that flavor is important!! But this definitely looks awesome, I made a very similar birria a few months ago, and canned the leftover birria juices, and use it to make ramen, best ramen ever!

    3 hours prep and just 30 seconds to eat it. You'd need to cook that for a large group to make it worthwhile. Looks DAMN good tho.

    Some people don't like cilantro because they are allergic to it. It leaves a horrible metallic soapy flavor on the tongue and it overpowers the flavor of the dish it is meant to garnish.
