    SINDHI ALOO TUK
    Preparation time : 10 minutes
    Cooking time : 25-30 minutes
    Servings : 2
    Ingredients
    For Fried Potatoes
    3-4 medium Potatoes - wedges (आलू)
    Oil for frying (तेल तलने के लिए)
    For Masala
    1 tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    ½ tsp Dried Mango Powder (अमचूर पाउडर)
    ¼ tsp Black Salt (काला नमक)
    ½ tsp Coriander Powder (धनिया पाउडर)
    For Garnish
    fresh Coriander Leaves (धनिए के पत्ते)
    Process
    For Fried Potatoes
    Deep fry the potato wedges in medium hot oil until soft and light golden.
    Remove on an absorbent paper and let them cool a little.
    With the help of your palm press lightly on the potato wedges one by one.
    Once all done, keep in the fridge for 5-10 minutes.
    After that fry them second time in hot oil until golden brown and crispy.
    Remove on an absorbent paper and keep aside for 5-6 minutes.
    And now fry it third time in super hot oil until golden and super crispy.
    In a hot pan add the fried potatoes and the prepared masala, coriander powder and toss it properly making sure that it is coating everything and saute for a minute on medium heat.
    Remove and serve hot and garnish with coriander leaves.
    For Masala
    In a bowl add degi red chilli powder, dried mango powder, black salt mix it properly and keep aside for further use.

    Finally something my family is eating for all their lives. We also make it with arbi, as arbi tuk. But with arbi, it is first boiled and then used. We mostly make it with arbi and that is far more tastier then normal arbi. My family uses crushed arnar dana.

    Chef have you noticed. Hundreds and thousand of sindhis have commented on this video of yours and also loved that you posted a recipe of sindhi food. Sindhi food is much underrated among the culinary classes or you can say professional Cooking but the fact is it has its own world. Be it sindhi koki or sindhi curry or be it sewaiyan aloo or be it saai bhaaji. It felt so good seeing you proudly promoting the mastery of Sindhi food. Please promote some more dishes.

    Tbh this is an adopted version being a sindhi it is actually made of taro(kachaaalo/arbi) but after partion comming to india some parts had less availability of taro and hence the use of potato.

    Green masala aloo tuk is a variant often made at my home. After 1st fry of potatoes we press them and stick green masala paste on one side of potato (wheat flour is used for binding and a perfect masala paste should stick to the side and not come off when we put it for deep frying again. You should try green masala aloo tuks chef. Infact we make such tuks out of aloo, baingan and even raw banana with same process. Thank you for representing Sindhi cuisine on your channel.     Yaar you took me into the memory lanes- I had lots of sindhi friends and i have tasted this many times just loved it and enquired about the recipe but no one gave me and finally you made my day.

    I am Sindhi and living in institute hostel in Punjab..
    We, Sindhi, can't rely on the mess food so I started cooking things by my own.
    Then I wanted to upgrade..
    So cooked new recipes after looking your videos, like upma, mushroom masala, dum Biryani, mutton rogan Josh... All dishes were like finger licking good..
    On Saturdays, we generally organise small parties where I cook dishes inspired/learnt from you..
    So this weekend my friends are going to get this aloo tuk. Thanks for reminding this to me.. I completely forgot..

    Wow ranveer. So relatable being a sindhi. Maza aa gaya. To give more taste we add more of coriander powder. Also, we can repeat the same process with arbi known as kacha allo in sindhi. We also do that with bhindi . we call them soak aloo Or soak bhindi... 🥰😍😍 that's also really tasty and worth a try
