A few years back I decided to basically reteach myself to hand sharpen completely ambidextrously (right, left, edge towards, edge away). It took time but as I became more and more proficient it really allowed me to perfect getting an even apex with a “flat” edge bevel, especially when reprofiling. Now anytime someone is new to sharpening I always suggest or push for them to learn ambidextrously. The whole thing is already so difficult and foreign to majority of people that I figure why not learn fully ambidextrous because I wish I had from the jump. With all that said, I’ve really been enjoying watching you learn and improve your skills!

Which led to me wanting to learn sharpening ambidextrously. So yes I completely agree and it’s also far more forgiving while getting the mechanics of it down and working out the awkwardness of it.
This is interesting. I got into free hand sharpening before the internet and while i was in my early teens. Nobody showed me how to do it, so i instantly did try to do it ambidextrously. And have kept doing that. I only realized that few others do that, from watching YT videos. 😁 (And i was over 40 when realizing that cutting fingernails ambidextrously with nail scissors isn't common either because people can't do that with their non dominant hand, and refuse to learn it.)
I ❤️ my spyderco ceramics. I had always heard that the spyderco medium was in the 800-1000 grit range. You should lap that med ceramic on one side with soapy water and wet/dry sandpaper. 220 then 400 grit. Even a cheap double sided diamond pocket stone would work. Gives you two different sharpening surfaces on one stone. I have my medium and ultra fine lapped on one side. Used with a dish soap and water solution, they leave a pretty good polish.
Can you survive with just one stone? Yeah. But honestly, if I didn't have a coarse diamond (220-320) to do rough work with, I'd just throw the knife away. Trying to sharpen out lots of damage on stuff like s90v on just a Spyderco Medium would make me lose my mind. Even S30V that's been damaged is a bear. Or K390. Yeah, I love my Medium, I take it everywhere with me and use it to keep my knives sharp, but when it comes to fixing an edge, I pull out the coarse stones! Takes so much less time! But yea, you can make it with just the one if that's all you have! Also, I can't do it with the stone on a table. I hold my stones in my hand. That's what made hand sharpening work for me. a spyderco medium ceramic and a strop is all that ive needed for the last 5 years. worksharps, whetstones, rods and abrasive plates are all collecting dust.
Applying light pressure gives the best results for me. Less chance of a f up, more consistent angles, and finer scratch pattern. On diamond plates its almost a must, you otherwise damage the surface.

If you do 10 passes on pasted strop with diamond compound you risk creating a Foil Burr. You can't feel it but it reduces edge durability. Science of Sharp has a great article about Strops with electron microscopy images. You can avoid Foil Burr by doing only a couple passes on pasted strop or use a hanging denim strop.

Are you referring to a natural Strop without any type of paste?- EDIT: Don't worry, I have already found what type of strop you are referring to; The literal translation into my language didn't make sense to me, but now it does. I have always believed that those were much worse, I will study why that article says the opposite.
@@SHEagleYT If you look on the images it's clear which one has the better results. Edge trailing usually is bad at burr removal and a small remaining microburr remains on most most sharpening materials including all stones. The clean edge on trailing from the hanging denim is an exception, probably because it's softer and manages to slightly abrade the tip, breaking off the burr but not so much abrasion as to actually damage the tip. Hanging denim will also add a slight convexity to the edge but if you do it without any pressure this convexity is very small, less than a micron, and will not affect knife performance Foil burr breaks or rolls if you pass it on wood. After that the edge stops shaving hair and cutting paper towels. It's still a usable edge for a knife but will not cut as well or last as long as if it were property structured. If you like pasted strop it's a good practice to check for sharpness before and after a few wood passes. The articles on Science of Sharp are amazing. I do recommend you go and check them out yourself.

My knife life is changing ..I don't really know why but I'm losing interest on super steels..I like the relationship of using a knife and needing to hone or sharpen ..on most knives I use either a dc4 or a shapton orange..love medium grade steel 14c and the like..but for hard use true hard use stabing into the soil or batoning it's hard not to like aus 8.. alot of this has come from your channel
I hear ya. I like being able to sharpen my knives in the field. Plus I never cared for how brittle many of the super steels are. When I'm out in the middle of nowhere thick boned game I prefer a good old carbon steel.
Same. Exception is prior to deer season I’ll get my m390 knife sharpened and polished to a mirror edge, I can work through 5-6 deer without an issue. Anything else I’m fine with average steel and touching it up often.

I'd love if you added a shave test after your sharpenings....i am learning myself and while i can get a knife to cut paper pretty well, shaving is non-existent thus far(which is my goal)
Have you ever done an edge retention test on a high-vanadium-carbide steel sharpened with diamonds/cbn vs ceramic? Common wisdom is that if you sharpen high-VC steels with ceramics the edge does not last as long because the edge carbides are damaged or pulled out rather than sharpened, and it would be interesting to see if that holds up in your sharpening test, although I think a guided system would be better for that video to reduce variables of course.
Science of sharp shows this. Mostly, they poke out and don't get abraded. They're really well stuck into the steel matrix though. Exposing them without grinding into them, might help improve wear resistive on a working edge though
I have tried a lot powder supersteels. Lastly I like 14c28n and Nitro V on my Civivi pocket knives. I also like AUS-10 on Coldsteel ones. As I am a hobby sharpener, it is no problem for me to resharpen them. It's actually a pleasure for me 🙂
AEB-L, Nitro-V, and 14c28n are all the same type of steel, one where all the carbides dissolve in the heat treat so they're miniscule, smaller than powder metallurgy, so they can hold razor edges the best of them all, especially when run harder than normal, since they're also incredibly tough
Is it sharp? HECK YEA!! That is all I care about! In my sharpening I have a 320 Stonewall use if the knife is really dull or chipped. Then I'll migrate to that Spyderco medium and stop there if it's just for my use! If I'm shopping for someone else, I usually go to the Spyderco fine just to make it look a little better, but I think I like the edge from the Spyderco medium the best!
If I had to have one sharpening stone it would be a DMT Duo sharp coarse and extra fine, in fact I've been using that exact stone for years, just finishing with some fine ceramic. My only problem with ceramic is that it gets loaded quickly and needs to be cleaned constantly.

If you want to remove the permanent marker from the blade, all you need is a dry erase marker. You colour over the permanent marker with the dry erase marker, then flip it over and it erases both markers ( i saw it on a video).
You can get a keen edge with a rough 400 grit stone, outdoors55 taught me a bunch of interesting things lately and he seems to think you can get the same edge with any stone, and the rougher it is, the fewer passes and the smaller the window for human error.
If i was only doing 1 stone it would be a 400ish grit diamod plate, and probably a strop with 1 micron diamond. Give or take. The diamond will be a lot more versatile. And will give a nice agressive edge on whatever you sharpen
I for one say a prayer of thanks to our prehistoric ancestors for their discovery of vitrified ceramics every day. It actually causes a fair bit of friction in our household, what me me missing my daughters clarinet recital due to needing to light all 700 candles. #knifeguyproblems
I dig the super steels plenty (M390/204P mostly bc of my Microtechs), but I’ve been into knives long enough that I have some VG-10, 154CM, AUS-8, and differentially hardened A2 (60-61 HRC at the blade and 58/59 HRC at the spine). The former are really, really cool, but I love how stupid simple it is to sharpen the latter. And, since plenty have killer blade geometry, they keep functionally sharp for a while after dulling from shaving sharp. I love what you do dude. Ty.

No. it's an overpriced and limited. It's just sintered form of vitrified alumina ceramic. That is also just a rebranded and resold version of another companies abrasive, like everything else gimmick in chief SC sells. Doesn't cost nearly what they sell it for. save your money and get a real stone like a "1k" shapton pro. but maybe learn how to actually freehand first. it's not difficult, if you actually try and apply yourself for like... not very long. There are few new skills that are easier to acquire. Like we're not going to moon here. A child could learn to a high degree within weeks. Could you get by with just a 1k shapton pro? Ofc you could. But you're better off with 2, or even 3 stones. You know, like course, medium and fine. aka grinding/shaping, sharpening and finishing/polishing. Though the finishing could also be done with a strop. I would never say anyone NEEDs more than 4. 4 is the most you NEED to do literally anything you could ever do. From fixing something badly damaged or without an edge entirely to a razor sharp true mirror edge, even in 10v steel. You don't need more than 4 abrasives, max. So how many stones do I own? 30+
I like Pete, his freehand skills tbh are more like 1-2/10. Most is the pocket knife super steel community on YT are ALL terrible at free hand sharpening. If u really want to learn or understand the art you'll find quality knowledge in the artisan Japanese culinary knife community. I'm about a 4/10 on a whetstone & I've been sharpening for 3 years.

The spyderco medium stone is underrated. I used 80 grit silicon carbide to make one side coarse as well. Perfect double sided stone for larger blades.

I’ve found that a little mineral oil on the spyderco ceramics both as a lubricant and cleaner helps keep loading to a minimum

I love my beavercraft strop. It's a workhorse for my carving knives
One trick I have is use a little water and you can see when the edge is flat by it pushing the water out from apex

Hey mate, have you tried cleaning them with an eraser? If you do it that way it’s only a 15 second job so it isn’t so annoying

Wrong technique. Never bend your wrist. Always keep your wrist locked. He has no idea how to freehand sharpen so dont take his advice.

I like Pete, his freehand skills tbh are more like 1-2/10. Most is the pocket knife super steel community on YT are ALL terrible at free hand sharpening. If u really want to learn or understand the art you'll find quality knowledge in the artisan Japanese culinary knife community. I'm about a 4/10 on a whetstone & I've been sharpening for 3 years.

I USE A PIECE OF SQUARE CERAMIC STONE THING TO SHARPEN ALL MY CHEAP AND EASY STEELS AND IT WORKS PRETTY WELL FOR ONLY ONE SMALL SQUARE PIECE OF CERAMIC LOL SO IF I CAN SHARPEN A KNIFE WITH JUST THAT THEN ANYONE SHOULD BE ABLE TO SHARPEN A KNIFE WITH ONE OF THESE STONES OR DIAMOND PLATES OR WHAT EVER FOR SURE
