    Who doesn’t love pancakes? 🥞
    This is the simplest yet delicious pancakes recipe I have ever tried.
    You can eat them for breakfast or as lunch, with sweet or savoury toppings.
    I m a fan of maple syrup on pancakes but you can choose also honey if you prefer.
    In this recipe i didn’t use any sugar or baking powder , which makes the batter healthier and lighter to digest.
    This recipe is relatively low in calories and fat and high protein , so it’s the perfect sweet treat if you’re looking to lose weight or build some muscle.
    Ingredients
    80 grams flour
    2 eggs
    6 grams baking soda
    12 grams lemon juice
    2 spoons of Greek yogurt
    splash of milk
    Method
    sift the flour in a big container or bowl
    add the egg yolk, yoghurt, baking soda and milk
    whisk together until ingredients are incorporated, you might need to adjust the consistency with more or less milk. You want the mixture to be soft but not too runny
    beat the egg yolk with some salt and the lemon juice. They will be ready when you can turn the container upside down and the egg whites won’t fall off
    incorporate the egg whites in the batter in 2-3 times. Mix well together with an upward movement, this will help to incorporate more air and the pancakes will be fluffier.
    heat up a pan and use some cooking fat, pour two spoon of batter and cover with a lid. Turn the pancakes upside down and cover again. This will help the cooking process.
    serve the pancakes with your favourite toppings and some fruits if you like it.
    I’ll give you a few tips:
    Mild sour fruits match perfectly the sweetness of the maple syrup and will deliver a dish which is really balanced in taste and flavours.
    Add some almond or peanut butter if you want a higher protein pancake.
