Eastern Carolina BBQ Sauce - Carolina Vinegar Barbecue Sauce Recipe

  • This East Carolina BBQ Sauce would be a perfect compliment to BBQ Ribs and Pulled Pork. I also think it would be a great BBQ mop sauce for Chicken as well. This Eastern Carolina BBQ Sauce is a nice change of pace from your typical thick BBQ Sauce. This BBq Sauce Recipe would be good for meats that have BBQ Rub as well as naked meats with no BBQ Rub as well. Because it is so thin, it can really penetrate into the meat. On a side note, I may see how this works as a brine or injection.
    I made this recipe previously using the recipe on www.amazingribs.com and really liked the results. That being said this is a BBQ Sauce Recipe that you can tailor to your taste, so I made a few changes that made it even better suited for my taste.
    Below is the Original East Carolina Recipe with my changes noted:
    * 1 1/2 Cups Distilled Vinegar
    * 1 Tsp. Hot Sauce (they recommend a Louisiana style or Texas
    Pete Style Hot Sauce. I like hot sauce that is actually hot with
    more flavor, so I went with a habanero hot sauce called Multiple
    Personalities. Just use your favorite
    * 2 Tbsp. Sugar (White or Brown) I used about 2 1/2
    * 1 Tbsp. Salt
    * 2 Tsp. Crushed Red Peppers ( I used 3)
    * 2 Tsp. Black Pepper
    You can also add butter and heat it up if you like ( Up to a stick)
    Try this Homemade Barbeque Sauce. I'm sure it will become a staple in your BBQ Sauce Rotation

    One thing I love about this kind of sauce aside from the flavor is how adaptable the recipe is. I prefer cider vinegar but I’ve used the distilled too and it’s great. Adding the habanero hot sauce was a good call - can’t go wrong. Great recipe, Lyle! 👍👍

    The thing about East Carolina sauce is, it compliments the smokey pork, not add flavor or over power. That’s why you use a mild hot sauce. Also the authentic sauce uses half&half cider and white vinegars.

    I use this exact recipe, but kept the Texas Pete. I increased the TP from 1tsp to 1Tbs. It brought just the right amount of heat for my taste.

    I use 1:1 cider/distilled vig ratio, turbinado sugar instead of brown. I also place mixture in a sauce pan and bring it to a simmer, let cool and its ready to go. No need to lay it in fridge waiting for dry ingreeds to hydrate. Love the carolina style sauce!!! Possible variations are limitless!! I'll even make a batch, fine mesh strain it and pour into spray bottle to keep ribs wet in smoker, MMMM!!!!!

    May I get excited whenever I hear the words Carolina BBQ SAUCE. That's pretty much our basic Eastern Carolina recipe. The other side of the carolinas they like tomato base sauce. THUMBS UP LYLE

      @@antoniomccoy9451 upstate South Carolina, Lexington style is a thinner ketchup based sauce with vinegar and sugar. A true Eastern NC style sauce wouldn't have any sugar in it.

    Nice. A vinegar sauce is one of my two favorite sauces for BBQ. The other is a mustard sauce.

    8-19-20 - Love your recip. Gonna make today. My Grand mom use to make for chicken wings. No butter, but the drippings after wings cooked. Then she'd baste the wings and back in oven for a moment.

    Authentic sauce uses equal parts white and cider vinegar. Extra spicy heat is added by the individual as large roasts are generally smoked and feeds a crowd. Not everyone can handle the heat. 😁

      Im not sure about that. Maybe a little cornstarch

      Strain it thoroughly with fine mesh or cheese cloth and blend in Xanthan gum, start small with this size batch of sauce, like half of an 1/8 of a tsp. I prefer a stick blender because it wont aerate like a regular blender but a regular one will work fine.

    YEARS ago I knew a man from the eastern part of the Carolinas and he dug a pit in my mother's yard (she didn't like that), made up a sauce similar to this (not so hot), marinated a brisket in it for I don't know how long, wrapped it in foil and put it on top of hot coals in that pit and he put something on top I'm not sure what. Best brisket I've ever had (my mother thought so too) and I'm from Texas so we know brisket, but not like this. I much prefer vinegar based sauce now than a tomato based one.
