Lol They were thinking too much on creating height, and rushing to that part, when I fact it’s the whipping of egg whites that will get them what they were rushing too. I think overwhipping is *probably* better than under... in this case anyways. Over whipping just means you’ve got extra air. Hahah

@Hasmeen C. sure, but it really isn’t necessary, you could do even thought the vinegar. It’s just an extra step to make it easier for them. Lol
They were thinking too much on creating height, and rushing to that part, when I fact it’s the whipping of egg whites that will get them what they were rushing too. I think overwhipping is *probably* better than under... in this case anyways. Over whipping just means you’ve got extra air. Hahah

Not too sure about sea level, that’s very interesting, but humidity yes. Flour is hygroscopic, meaning it came absorb humidity and affect the weight of the flour, as well as changing the way you dough turns out. This is why storing ingredients in air tight containers is important.
