    Instead of the salted egg yolk, I would use celery, salted mustard vegetable and quail eggs !!!!

    Enjoy your panache as always; to balance the saltiness of the salted egg yolk, one tablespoon of honey or blue aguave would work. Best ishes

    Hi! I noticed that sometimes you used the whole egg for the cornflour to stick but with this recipe only the egg whites. Is it cause of any reason other than flavor?

    Started doing this dish a few years back. Exactly the way I do it but I have never double fried before. Is it just for texture?

    Is it not possible to use yolk from a normal boiled egg?

      The yolk wouldn't have the same dry texture, and will also have considerably less flavour! - Lee
