    This is a brilliant base recipe. To make it emulate the waffles found in food trucks in Brussels and Liege, add brown sugar to either the top or both the top and bottom of the batter when putting it into the waffle maker. This step gives it the golden brown color and that crunchy sugary shell you expect from an authentic Belgian waffle.

    Just made them! Used almond milk instead of cow + 1 tablespoon of yogurt. And they taste great!!! My Belgian boyfriend said: approved! 🎉perfect balance of softness and crunchiness.

    I made them without the pearl sugar and they were perfect for sweet and savoury toppings. Easy recipe, crispy outside, fluffy inside, 10/10

    Bless you bro. I visited Belgium from the U.S. when I was 13; I'm in my 30's now, and I've never forgotten how wonderful liege waffles are. They might be the most delicious thing I've ever had. I can't wait to try your recipe to see if I can replicate a melt in your mouth liege waffle.

    For those who can’t find Pearl sugar, I smashed some cubed sugar. It’s not perfect but it works to have little chunks.

    Hope i’m right:
    7 gr active dry yeast
    13 gr white sugar
    90 ml lukewarm milk
    1 & a half eggs
    118 ml melted butter
    5 ml vanilla extract
    192 gr flour
    1.5 gr salt
    96 gr pearl sugar

    This recipe is the real deal! Crunchy crust, chewy crumb and loads of flavour... just like the host said, you won’t need any toppings to enjoy these beauties (although they are great with some whipped cream, too!).
    They seriously reminded us of the delicious waffles we’ve had when visiting Ghent.
    Well done and thank you for sharing this recipe! This really made our day and finally convinced us to purchase a waffle maker.

    So happy right now. I can never go back again. I have only ever tried one other recipe that also bragged about itself being “foolproof”. That was a bust. A dense, sad bust.     I've been watching your channel for about 2 months and thought I'd check out your older videos. I'm so happy you made this particular recipe! I've made dozens of batches of waffles, but every "Belgium Waffle" I've tried has never been like this at all. Can't wait to try this recipe!

      ANTI-CHEF yeah I can totally see the progress you’re making in the kitchen, and it’s so much fun to watch! I’ve never made Belgian waffles myself, but my dad got a stove top waffle iron maker thingy for christmas and he’s been boasting about how amazing his waffles are (haven’t tried his yet). A Belgian waffle competition might go down soon in the Thijssen household, as my dad and I never say no to a little kitchen show down. I’ll keep you posted!

    Wow I'm watching this and I see such a huge change between when you were in the apartment before this, and when you got to belgium, your whole demeanor, and way of doing your videos, everything is different. Belgium had quite a good effect on you. And there's a calmness that there was not present before. Amazing what changing the scenery could do for one psyche!!!

      It’s a sin to eat Liège waffle with toppings. I don’t get it. Sugar already in it.
      Brussels waffles are acceptable for toppings. That’s it.

      @@antichef I guess it's mostly intended for tourists, because it looks more appetizing. I am from Belgium myself, and when I was young, I wasn't aware that they put toppings on Liège waffels, it just wasn't done.

    I made this 3 times: once when I was in Romania back home and 2 times living in another country. I can tell you that th recipe is very accurate and good and that the pearl sugar is everything. I also use to think it's not when I used normal sugar in Romania, but the pearl one really adds a crunch. Also, I saw that the flour is also suuuper important. In Romania and where I live now I always got the normal cheapest flour. I realised that the one back home was 2 times more absorbant than the one where I am right now. So in order to get that dense texture and feeling, where I live now I had to add almost double the quantity of flour, otherwise it would have been fluffy, not dense.

    This recipe is genious! Made myself a sugar free version by replacing the sugar with erithrit powder. It tastes so much like the waffels I had in Belgium and now I can eat even more of them!

    I lived in Belgium and was looking for a proper waffle recipe to make it at home. This one it is the right one! I added brown sugar as didn't have pearl sugar and it tastes delicious!

    Man I did not know the sugar was mixed in to the dough. I always thought it was just sprinkled on top. Good stuff. You see deserve way more subs. You for sure earned 1 today.     easy recipe and good results. If you're on the low-sugar side of life, I suggest reducing the pearl sugar at least to 100gr. I still put 100gr and it was too much, so next time I'll be doing 70.

    Pearl sugar is used a lot in Swedish cooking as well, though the Swedish "pearls" are much smaller!

    Yo! Been a while. I went back to this video and recipe today. Found Swedish Pearl sugar in the grocery store, it's smaller, the size of pretzel salt, but it worked ins pinch. Also, instant yeast worked just fine 👍🏻

    As a Belgian ex pat I can confirm the deliciousness and success of this recipe. You can substitute coarse turbinado sugar for a less sweet waffle. Wicked sweet. Like half of the pearl sugar.

    I wish I'd seen this video years ago! I lived in Liège and Charleroi for 8 months in my twenties and was shown by a local how to make these. I wrote the recipe down using grams and when I got home to Canada, I struggled to get the recipe right lol. And the recipe was different (and more complex) than your version, so thank you!!! I just need to get my hands on some sucre perlé....

    Never really liked waffle over pancakes but after eating these I can say for a brief moment they came close to making think perhaps I was wrong. My family and I thank you for uploading this video with the recipe so very simple the hardest part was locating the peal sugar and not burning myself from the melded sugar

    Made these for my daughters 16th birthday breakfast today. I ordered pearl sugar but it didn’t get here in time. I decided to press on anyway.
    After letting the dough rise I added 1/4 cup of white sugar to the dough, made the (5) “larger than golfball but smaller than baseball” doughballs. Then once the dough was placed into the center of the waffle iron I sprinkled some brown sugar on the top. Closed the waffle iron @med/high heat for approx 5 minutes and they turned out amazing! I also found that spreading some butter on the iron between waffles helps the sugar to caramelize and makes it easy to take them out.
    Finally I can stop looking for the perfect waffle recipe. This is gold. Can’t wait to try it next time with the pearl sugar.

    this is the best waffle I've ever made! I cooked it only 3 mins tho. and I made so many. Can it be frozen? and how do I get it's crispiness after being frozen?

    Recommendation: More standardized way of writing the measurement as people are sometimes confused (based on some comments).
    I will try to reduce the pearl sugar to 1/2 cup next time.

    These turned out fantastic! I made a double batch and froze half. They were perfect reheated in the toaster. What he doesn’t mention is what the Pearl sugar does to your waffle iron. I found a wooden skewer was the ticket for getting caramelized sugar out of all those little squares.

      Its an old comment but I've seen people use the frozen dough strait out of the freezer here in Belgium(they were frozen in waffle size). I don't know how they froze them and the recipe is probebly a bit different but you couldn't tell taste wise. I feel a reheated waffle is not the same as a fresch one. Might be worth a try.

      I used 1 and a half eggs for 5 waffles. 2 small eggs could work

    I make this recipe all. The. Time. So damn good.
    Over time I’ve made a couple of adjustments - I use buttermilk, lessened the pearl sugar amount, and use only one full egg with the other being yoke only.

    I skipped the pearl sugar part because I didnt have it but later found out I should have just substituted it with normal sugar but other than that it came out amazing😁thanks for the recipe

    I dont like the pearl sugar when I go out to our local Belgian waffle place so can I take out the pearl sugar and just add regular sugar instead so its still sweet?
