Lovely recipe just needed your advice. If we have to make a caramel commercially in for a large kitchen and I wanted to very very thick caramel what do you think should be the proportions of the salted caramel? Meaning ratio of sugar, butter cream et cetera Do I need to use a wet method or a dry caramel method? Thank you

If I want to make it thicker, can I reduce the amount of cream? And how much?
I will recommend to keep it this way and reduce (let boil) until desired consistency.
