I've got an EOS-R like yourself, and I've been lead to believe that the Canon sensors retain a lot of detail in the darks, better than other manufacturers, so allows you to shoot darker to retain the highlights then can bring back the darks in processing.

You can actual grab the histogram sections and move then directly.
