Just finished my interview, the interviewer stated he was extremely pleased and happy with how my interview went. He further praised all my answers and told me I would be an exceptional chef if I keep doing what I do. Rest of it if anyone wants some information go through this video it helps a lot. PS didn’t get any questions related to dessert or bread at all
Got a question: We knew that not all the kitchens we are working in can be used for the skills assessment, on top of the fact that the kitchen must be “commercial”, also many other requirements should apply to the kitchen. Do you know any of those requirements are? TRA website seems to be vague on this topic. Example: commercial cooking/chefs are most likely to cook western/European style food, but if you are working in a Chinese restaurant for example, you probably will not pass the skill assessment. If I extend the question: if I work in a restaurant where it cooks Thai food, Vietnamese food or Indian, I am guessing that the same rules will apply. What do you think?
Skill assessment is about two types commercial cookery or Asian cookery. So if you work in Thai cuisine,you can apply Asian cookery skill Assessment ,kitchen doesn't matter,
This video is unfortunately outdated but still useful . The course has recently been updated in the last couple months . It is equivalent to stage 4 hospitality management. Food based questions took up about 15 percent of questions. The rest is team management,Hygiene food cost , pests , problem solving, diversity in the kitchen. Stock co troll, spending targets. If you can't answer the food based questions your in the wrong industry. Name 3 hot and cold dishes , how do you make 1 of those, name 3 fish dishes how do you Prepare, how do you make a cake ... . Walked out of my interview 1 hour ago ..February 2024

Each and every chemical have their own ratio and it will be on the label or the company should have user manual . For example Alpha sanitiser . 2 ml in 1 litre water like that ,every brand have its own ratio
