I'm a university maths student, and last year I took a course called Real Analysis. Without fail, every document given to us referred to it as Real Anal. To this day, my transcript lists the credits I got for passing Real Anal.
Used to think the same thing, but what they do is just cut off the string after a set number of characters, and then they add the ... after that. It doesn't care how much comes after it. You could check the length of the string and then only cut the string off if necessary, but that takes more effort and isn't really important.
Bcuz it's not the last word of the sentence. It makes more sense to hint that the title goes on longer than that word, rather than just end the title in a random word that a lot of times wouldn't even be completed by the next three letters.
