  • Making the most of what is in my fridge and pantry with this simple but so delicious egg and fish stew and boiled yams.
    Ingredients:
    9 regular sized tomatoes
    2 tablespoon tomato paste
    1 large onion
    7 large eggs
    6 cloves garlic
    1/4 cup extra virgin coconut oil
    2 6Lb portions salmon fillets
    1 teaspoon smoked paprika
    1/3 cup cilantro, chopped

    I always chop my tomatoes when making stews, I don't like blended tomatoes in stew it keeps it too long to cook. I am a man, never been to catering school but I love cooking. I thing its time I start a TH-cam channel to inspire my fellow men... who agree with me ✌

    I used corned beef since I did not have fish. I love this recipe, it reminded me of the street food back home.

Well done Onuawaa ❤️ You’re the bestest 😘😘😘 i about died about the “ y3 dii choki car anaa” oh our moms and some the things they said and did that’s still not out on the streets yet! Mehn 😅 my mom still till date says some things to me that make me go “wow” just “wow”🤣🤣😅😅😘 yeah wasn’t funny at all back then! But is hilarious now, seriously, my mom will say something wild and start laughing about it herself🤣🤣Gotta love them oooo! They are our rock😘😘❤️

      Onuawaa medaase oo! That stew was good. Even Madam “I’m allergic to Vegas” wilfully had a little 🥳. These kids of ours have no idea what we had to go through with our mums! Yes indeed some of the things they say just drop jaws...potentially the teeth as well🤣🤣🤣. Our mum’s sounds like they would be amazing company for each other paa oo 🤦🏾🤦🏾😂😋

    What you said about the chopped onions is so true! lol. I am also used to chopping the onions this way for palm oil based stews

    You’re bringing back great memories of my childhood! Egg stew was the first stew I learnt to cook. Loved the chunkiness! Maybe that’s why your mom preferred chopping the onions!!!So simple, but oh so yummy! My secret weapon is curry powder! My mama never knew, but sometimes I ended up cooking the stew twice! 🤫🤫Don’t ask why- if you know, you know! 😂😂😂

    Tomatoes taste nice when you cut them, personally that's how I make my egg stew too. When u blend, it has its own taste too

    Good job. Could also substitute the cilantro with some kale or broccoli 🥦🥦.. The idea just popped up 😍😍

      Kuukua Dee - No you couldn’t, cilantro is delicate and cooks in seconds whereas kale and broccoli are more fibrous and require a much longer cooking time. You would never be able to add them to the dish last as you would the cilantro, which is important for its herbaceous flavor and nutrients. Parsley would be an alternative option.

      Should be fine if you use a lean meat or fish, and get good quality eggs like free range organic. Limit the yam, or eat with brown rice
