Cook Crowd Pleasing Classic Ghanaian Chicken Stew with Rice Vermicelli And Slaw With Me!

    This classic Ghanaian 🇬🇭 Chicken stew served with some rice vermicelli and simple slaw definitely hits the spot any day. It is very big on taste and fragrance and bound to be your best yet!
    Chicken stew ingredients:
    5.12 Lb whole chicken
    1 clove garlic
    45 grams ginger
    320 grams tomato paste
    1 tsp aniseed
    1tsp pepper corn
    1tsp coriander seeds
    2.5 cups cooking oil
    1 Maggie shrimp tablet
    3 fresh bay leaves
    Small bunch fresh basil
    2 habanero peppers (plus extra to drop in stew if preferred)
    2 large red onions
    1 tablespoon curry powder
    Salt to taste
    Ingredients for spaghetti braised rice
    3 cups basmati rice
    2 tablespoons avocado oil
    About 1.5 cups broken spaghetti
    3 cups water
    1 green habanero with stalk on
    A quarter of a medium onion, sliced
    Salt to taste

    Hi I just love the way this looks i am glad I had seen start to finish my only comment for me is the oil, i will definitely 👍 try this with not so much oil and one more thing try making your rice dish with red rice or mixed you'll be eating red rice all the time but we are all learning from you and I have tried many dishes sometimes with my own spine, but do try the red rice and let us know what you think.

    You're a great and imaginative cook so please don't take this wrongly. My only observation is that there was far too much oil for this dish to be regarded as a healthy choice. The skin of the chicken alone produces a lot of oil. I would rather have a healthier version .Grill or bake chicken pieces after boiling them. Fry all the liquidised mixture and tomato paste in two tablespoon of oil and ocasionally sprinkling the frying mixture with water to prevent burning and to aid the cooking process. . When the frying process is completed, add the tomatoe mixture and top up with some water if necessary and boil until oil rises to the top then add grilled/baked chicken pieces. Cook for no more than 10 to 20 mins depending on quantity of chicken. The stew can be equally as tasty with all of your spicy/herbal ingredients without using so much oil. Excess oil clogs the heart and leads to heart disease.and premature death. Water is the answer to the excess oil. To achieve an equally thick gravy simply add some more vegetables of your choice to the tomato mixture. This is just my healthy alternative nothing more. Same way too much salt is also causes BP. Black people have been disproportionately impacted by the pandemic due to some of our underlying issues like diabetes and BP so just wanted to gently remind folks about a healthier alternative not to crticise your cooking. PS if grilling the chicken pieces, base them for moisture with the remnant of the water used to boil them. Happy cooking everyone

      You can drain it after cooking, let it sit for a while.
      You need the oil to fry the tomatoes and other ingredients to get the perfect taste. After Forst use you can freeze it and break the fat off after solidifying.
