- Full recipe for Cream of broccoli soup
Prep time: 10 mins
Cooking time: 20 mins
Serves: 6
Ingredients:
• Olive oil 1 tbsp
• Onion 1 medium size (chopped)
• Garlic cloves 3-4 nos.
• Water 3 cups
• Salt 1 tsp
• Black pepper a pinch
• Broccoli 250 gm (florets)
• Butter 1 tbsp
• Refined flour 1 tbsp
• Milk 300 ml
• Black pepper powder 1 tsp
• Jeera powder 1 tsp
• Garam masala a pinch
Method:
• Set a pan on medium heat, add oil, onion and garlic and cook until onions are translucent.
• Add water and salt & pepper, cover and bring to a boil.
• Add broccoli florets mix well, further cover and cook for 2-3 minutes. Check whether the broccolis are cooked or not by slitting one of them.
• Cool down the mixture to the room temperature and grind them into a fine puree.
• Heat butter in another pan on medium low heat, add flour and mix well add salt and cook for 2 minutes.
• Add milk slowly and gradually and keep stirring continuously ensuring there are no lumps.
• Add the pureed broccoli mixture and mix well, add black pepper powder and jeera powder, cook on medium heat & bring to a simmer. Add salt to taste and garam masala a pinch.
• Your broccoli soup is ready to be served, serve hot and garnish with fresh cream and sprinkle some pepper powder as per taste.

Hi everyone hope all of you are doing good and are in good health. I had some broccoli 🥦 in my fridge and I wanted to prep something healthy and soothing. This is a really quick recipe and you can use olive oil or ghee instead of butter and wheat flour or oats flour instead of refined flour. I have just used traditional ingredients but you could chose to use the substitutions. Also you could serve the broccoli soup with of the white sauce preparation. Just after grinding the soup, add the seasonings and serve it hot, that too tastes awesome!

Just one word.. heavenly!!!! The recipe turned out totally yum.. i used oats flour n donno how or y i got the taste of coconut flakes in it.. this is my go to recipe fr the soup henceforth!! Keep up the good work👏👏
Does oats flour works well for white sauce?
@@ritikalra6810 It works great everytime. I even used it in Sanjyot's other recipes. Its healthier too.
So it means oats flour can be replaced where ever white flour is used is it... I can use it to make white sauce everything then ... yeah ... happy happy
I did it a week ago, I'm replicating it again later this week. this soup really is more than the sum of its ingredients.

@@monoshka4552 really awesome I make this twice or thrice every week. Just if you are adding Oats you need to mix too hard toh avoid lump, what i do is grind Oats and add small amount of milk there in to make a fine paste so that i don't have to manually do it 😊
