I think he brought 3 eagles because there were still Fell Beasts in the area that had been drawn to Mount Doom when Frodo put on the ring, we saw two get hit by debris so they were _right_ at Mount Doom where the Eagles were headed. What would happen if one of them attacked while all three eagles had precious cargo in one of their talons? Fight a Fell Beast with one leg while trying not to Gwen Stacy the Hobbits? Two eagles for Sam and Frodo, one as defense makes the most sense. Also, Gandalf didnt even know _Sam_ went with Frodo until he was told, how would he have known that they later teamed up with Gollum?

Personally, I think the ring sits on the lava a bit to show how much heat is needed to destroy it; when it hits the lava, the immediate area underneath the ring turns black and briefly cools, before heating back up and melting the ring. That would indicate it took a bit for even the heat from the lava in Mt Doom to destroy the ring.
