In Al fairness to him, though, he took the criticism well and he recognises that he'd have to learn this in a professional environment first.
I'm no pro baker, but did learn when I was eight years old, taught by my father, who was a professional baker for a large company. While I know the many rules of baking, the primary one to remember is that baking is science, and recipes must be followed to the letter for measurements, weights, times, etc. The old saying is "Cooking is art, but baking is science," meaning one has a lot of leeway when making savory dishes, but must follow the well-established rules of baking scrupulously. I do hope he learned to bake well, and that he succeeded in opening his own catering company. He sure wanted that badly!
Those cake criticisms were brutal. You could tell she didn't even know where to start with him because it just missed the mark so badly. Under-baked, uneven frosting, basic tasting frosting, weird decoration, etc. Just all around bad.

He doesn't want to be a pastry chef, but his wife finds it hilarious that he can't bake a cake for their daughter's birthday. He can, but it never tastes even as good as a box mix, so she does the baking. Now their daughter is doing most of it since both Mom and Dad work full time in very demanding careers (Mom is a CCRN, 12 hour shifts three midnights a week in a very busy ICU). Dau is now 20 y.o., is a student in our city's local college, but does love to cook, and loves to work at home alongside Dad when he prepares meals. The young man in this video has the desire to succeed, and I'm sure he probably did. This was a 2005 episode (or 06), so a lot of time has passed, and I hope he's enjoying great success in a catering business of his own now.
Business is not just doing the fun stuff. Business is 80 percent not fun. Thats why most people fail. Sure it gets fun once it actually makes money. But most small businesses don't get off the ground because it is time consuming and requires a lot of sacrifice. He isn't going to make it because he is not self motivated. Yes we all like to make a cake once in a while for someone in our home....but we are talking 500 cakes a week to make a business work and pay for the expenses. Not up to the challenge. It's a lot easier for a trained pastry chef to learn savory cooking than the other way around. I know two chefs who've been in their careers for many decades; one of them leaves all the baking to his wife and their daughter, him knowing that it's far more technical and delicate than he wants to deal with. The other one went back to culinary school specifically for learning to be a pastry chef, and he is now a very good one.
On their income, restaurants and entertainment should simply not exist. Rice and beans, peanut butter sandwiches, Ramen noodles. And they both need a second job.
Shamefully, no. It's 2022, and we still don't have dental care, nor coverage for most drugs. Health care is a provincial/territory issue, and most (all?) provinces will cover dental care for children. I think our province covers dental care up until age 11. We still have to use our private insurance first, MCP covers the rest.
Dental isn’t included except for children (generally)- other healthcare is covered but prescription drug covers depends on which province you live in. We have great healthcare but it’s not 100% comprehensive

Unlike savory cooking, where one can play with the recipes to their heart's content, baking is very precise and demands full attention to all the details. @Debbie Frampton, I'm vegan but don't really use plant based "meat" or "cheese", except as a very rare treat, or when it turns up really cheap at the salvage discount grocery. I shop the salvage and discount stores and a local produce stand, have a garden, eat whats in season, and no prepared/packaged stuff. With crockpot and rice cooker I can make beans and grains in all sorts of international iterations- lentil curry, lentil soup, Cajun red beans and rice, Spanish chickpea stew, hummus and falafal...it's never boring, but all the ingredients are super cheap. And there's good old reliable pasta in many forms, and that takes care of a couple nights a week. Tofu stir-fry, tofu scramble, tofu.slad sandwiches...and of course PBJ, oatmeal breakfasts. If you don't buy meals, just buy ingredients, you're fine. My only expensive indulgence is coffee. I drink half a pot a day. But always made at home, no Starbucks.
So many comments about the cake. Don't know the US standards. Here in Germany the professionell cakes have to look a little different. A friend of mine is a pastry chef, i know very well. The standards are extremly high.
The show was filmed in Canada, but here in the States there are very high standards for professional pastry chefs, too. Nobody can just claim to be one without showing their educational background, their experience under the apprenticeship of a professional baker, and several other requirements.

An actual check, or checks, was written out and mailed or delivered directly to the creditors---Gail would already have determined which one(s) the money would go to---and that "check" shown on camera is nothing but a participation award of sorts. Oh gosh, it's Judgemental Jane 🙄 *Look, people make it work on 24k ALL the time.* We did it last year (newborn, SAHM), no debt, and savings until Covid.. If they can manage to keep expenses under control they will be fine. **Part time work if they can get the right hours would help them too.

That cake 😖 He over-mixed it - the gluten is over developed, hence it’s flat with big holes in it. He can’t give it away for free. He needs a lot of training before he can go near professional baking.
This video was from early 2006, so hopefully in the ensuing 18 years he went back to culinary school and learned the delicate and fine art of pastry making.

So pregnant wife and needs training in his job. Geez. That was such an amateur cake. In our area it wouldn’t sell. Too plain and sloppy. Piping looks like a child’s. He really hasn’t given this much thought or time.
He was trained as a savory chef, not as a pastry chef. He would have had to go back to culinary school specifically for that---hopefully he did so---because it's very common for savory chefs to have no clue how to bake properly, and vice versa.
It's a lot easier for a trained pastry chef to learn savory cooking than the other way around.
I know two chefs who've been in their careers for many decades; one of them leaves all the baking to his wife and their daughter, him knowing that it's far more technical and delicate than he wants to deal with. The other one went back to culinary school specifically for learning to be a pastry chef, and he is now a very good one.

Shamefully, no. It's 2022, and we still don't have dental care, nor coverage for most drugs.
Health care is a provincial/territory issue, and most (all?) provinces will cover dental care for children. I think our province covers dental care up until age 11. We still have to use our private insurance first, MCP covers the rest.
Dental isn’t included except for children (generally)- other healthcare is covered but prescription drug covers depends on which province you live in.
We have great healthcare but it’s not 100% comprehensive

Maybe before starting a business, he should apprentice to a cake baker. That professional he talked to didn't seem too impressed!
He would have had to go back to culinary school specifically for pastry making. He already had his degree in being a savory chef, but he didn't have a clue how to bake, which is, as it is well known, a science. Unlike savory cooking, where one can play with the recipes to their heart's content, baking is very precise and demands full attention to all the details. He hadn't had that training yet---but hopefully he got it, and they're now doing well with their own business.

@Debbie Frampton, I'm vegan but don't really use plant based "meat" or "cheese", except as a very rare treat, or when it turns up really cheap at the salvage discount grocery. I shop the salvage and discount stores and a local produce stand, have a garden, eat whats in season, and no prepared/packaged stuff. With crockpot and rice cooker I can make beans and grains in all sorts of international iterations- lentil curry, lentil soup, Cajun red beans and rice, Spanish chickpea stew, hummus and falafal...it's never boring, but all the ingredients are super cheap. And there's good old reliable pasta in many forms, and that takes care of a couple nights a week. Tofu stir-fry, tofu scramble, tofu.slad sandwiches...and of course PBJ, oatmeal breakfasts. If you don't buy meals, just buy ingredients, you're fine. My only expensive indulgence is coffee. I drink half a pot a day. But always made at home, no Starbucks.

The show was filmed in Canada, but here in the States there are very high standards for professional pastry chefs, too. Nobody can just claim to be one without showing their educational background, their experience under the apprenticeship of a professional baker, and several other requirements.
