New York Style Pastrami with a TEXAS twist

  • Hello Frac Crew,
    Let's talk Pastrami. It is a long process, but oh so worth it. In this video I will show you how to make a brine, what cut i am using, and the smoking process. Of course I am adding what I call a Texas Twist.
    Brine Recipe:
    1 TBS Coriander Seeds
    1 TBS Black Peppercorn
    1 TBS Mustard Seed
    1 TBS Chile Flake
    1 TBS Allspice Berries
    1 TBS Cloves
    1 TSP Ground Ginger ( i used fresh)
    1 TSP Ground Mace
    1 Small Cinnamon Stick
    2 Bay Leaves
    1 1/2 Cups Kosher Salt
    1 Cup Granulated Sugar
    4 TSP Pink curing salt
    1 Head of Garlic cut in half
    1 White Onion cut in half
    Toast coriander seeds, mustard seeds, and black peppercorns for about 2-3 minutes or until very fragrant. Be sure to constantly move around so they do not burn. Add to pestle and rough grind. Boil 1 Gallon of water and the toasted seeds. Add the rest of the ingredients. Turn off heat and let cool off. Add Brine Solution and 8-10 pounds of ice to a bucket that you will use to brine. Be sure that brine solution is completely cool before adding meat.
