World's Best Chile Based Red Enchilada Sauce Recipe

  • In this world, there are two kinds of enchiladas. Red and Green. Wait, there is also white and brown. OK, there are four kinds of enchiladas. I feel like this has gotten off track a little. The two MAIN kinds of enchiladas are red and green. This is a recipe for one of the kinds of red enchilada sauces. It just happens to be my favorite. Forget tomatoes, chiles are where it's at! I hope you will make this because it is so good and very different from anything you can buy. Enjoy!
    4 Guajillo Chiles
    2 Ancho Chiles
    2 Chile de Arbol (adjust for heat)
    4 cloves of garlic
    1 medium White Onion
    1 tsp of Cumin
    1 tsp of Paprika
    1 tsp of Mexican Oregano
    1 tsp of Salt
    1 tsp of Maggi Seasoning
    3 cups of Water plus 1 more cup of water
    3 tbsp of Vegetable Oil

    Now that's a bottle of Maggi's! Haha. Maggi's has become hard to find nowadays in my neck of the woods. I was sure Raley's still stocked it, but I couldn't find it. A week later I looked some more and this time I found it at Raley's; it was hidden in the Asian Food section, even though it's from Switzerland.

    Thanks for this, man! Just discovered this other channel. I grew up in southern Texas with all of the delicious Tex-Mex and have lived in Oklahoma for the last 20 years where Mexican food is nowhere near as good… I’m trying to discover the recipes that remind me of my childhood in Texas. Thank you!!
    Any thoughts on how to make queso blanco that closely resembles the kind in restaurants? That’s one recipe that has always evaded me lol. I know all about the white American cheese, sodium citrate/evaporated milk, etc., but the taste/texture has always fallen short. I’ve also heard restaurants may use Easy Melt.. maybe that’s it..
    Anyway, thanks for these two channels and the videos!

      There is a recipe on Carlsbad cravings . com that is really innovative. It's Monterey jack and cheddar with some sour cream in there. The taste is really amazing and since every mex restaurant has those two cheese I'm guessing that might just be the trick.
