I had a Greek friend many years ago at work and she taught me how to cook mousaka the way they cooked it on her island passed down through several generations. She used mince lamb to which she added cinnamon and red wine. She didn't use potatoes just aubergines, it was scrumptious. 👋🏻🇬🇧💝

I slice my eggplants and potatoes. I prepare two large trays with baking paper and add eggplants on one and potatoes on the other tray. I brush with olive oil and sprinkle with salt and pepper and add on top baking paper and bake for half an hour. Then I start to assemble my moussaka

I made ken’s Moussaka..I added zucchini in his recipe and accidentally brought cayenne pepper extra hot. It turned out awesome awesome awesome. That I will make again. I’ve had moussaka but not like this one. Thank you Ken.😃

You explained it very thoroughly and you are right it is not hard just a matter of layering. I happened to have some sweet potatoes that I combined with the russets that gave it a yummy sweetness with the hot sausage I used with ground beef. I improvised on a recipe that was basically your method --much easier and healthier if it weren't for the belchamel. I served it with homemade olive bread and lemon bars for desert--total Greek style indulgence.
I would take the extra step of flash frying the potatoes for some crust on them, but besides that this is a really good guide on making moussaka. Thanks sir!
The handling of the eggplant and potatoes is fabulous. The one thing I always add to Bechamel is Parmesan cheese and I would continue to add that. In addition, I top the Moussaka with some grated Parmesan before baking. I am definitely going to try the process because it really shortens the time required. Excellent.

WOW! I'm so happy I came upon this video by accident. I've made Moussaka before, but it's been a long time. So, I made the meat sauce last night from my Greek cookbook & thought I'd try watching a moussaka video for fun; well, when I was following a different video, the eggplant/potato business was NOT working for me. The next thing I know your video came on. LOVED IT!!! So, I ended up correcting my eggplant by microwaving them, changed casserole dishes, added breadcrumbs to my meat like you said (awesome), and followed your bechamel sauce. This with the breadcrumbs is a phantastic idea (old for sure) - i cook normaly sicily typ of bolognese, but today i was in a hurry and cook it with ready basilikum sauce - and sorry with water - so it is this you said - to souping (?) my english as austrian girl (owefuly). I literally just made this, followed Akis from Jamie Oliver's foodtube. I used a ground lamb and beef combo. But apparently you have to let it set for about an hour after you cook it so I'm waiting!!!!!!!!!

This with the breadcrumbs is a phantastic idea (old for sure) - i cook normaly sicily typ of bolognese, but today i was in a hurry and cook it with ready basilikum sauce - and sorry with water - so it is this you said - to souping (?) my english as austrian girl (owefuly). Hi Ken, I have a question. Are there any cookbooks in English that have these recipes you make? I watch other chefs cooking Greek food and the way you show it is quite unique, you make thing simple and doable. I'd love to have written recipes

I literally just made this, followed Akis from Jamie Oliver's foodtube. I used a ground lamb and beef combo. But apparently you have to let it set for about an hour after you cook it so I'm waiting!!!!!!!!!

Absolutely! Just cook the veggies 3/4 done because they will fully cook at the end when baking....
