You know what's funny? Had Palethorn either NOT summon that demon OR just left while letting the demon handle Fortesque, the final battle would've been unwinnable.
And what the other commentor meant was, in this hypothetical third game, Sir Dan crashes on earth from the time travel with Kiya and confronts a monstrous hound. Sounds a little inviting, but it gets weirder. Sir Dan would confront his human self and this hound was a former pet of his. This all takes place 3 weeks before the Battle of Gallowmere we were briefed about in the first game. And the brunt of the plot is about lazy time travel tropes, a lazier time travel story where it's fighting for the right timeline. The kicker is that the ending conclusion is when Sir Dan plants enchanted arrows in Lord Kardock's tent, the guy you fight before Zarok in the first game and makes this body swapping potion. Presumably to use on his human self for some odd reason or another, it's not specified whom he uses it on but it's what he uses so the cinematic of what we saw with him getting the arrow in the eye is what restores the timeline. So, yeah it would've really have gone off the rails more which makes me like this sequel even less because it would've lead to that game if it ever came to light.

I like how with some bosses, they were revisited after getting the stronger armor... but still respected the weapon availability that would have been available at the time. Also... no damage with Iron Slugger... HOW?! I always thought you'd run into out of time issues with that one if you tried to kite all the time. I also had no idea about the camera changes you could do. That's just... okay, learned a lot with that one.
To be quite frank, I wasn't really a fan of the sequel. I didn't like the 'hub' with the professor, I didn't care for much of the new characters. I thought the main boss of this game was such a pushover (I kinda liked the voice though). The saving grace to me was it's retained gameplay, music and some of the bosses here. I'd be much more open for another sequel because we've only gotten two remakes of the first game at two different points in time now with this series, no follow up sequel has been made since this one. And yes I missed the hell out of the gargoyle heads from the first game, never really liked that ghost here.
I never cared for 2's tone; I know MediEvil 1 was not a particularly serious game, but it still had a cool, dark, Halloween atmosphere; 2 went a little TOO hard in the goofy comedy direction for my liking, on top of everything else you mentioned.
