  • An other varioation of bagarey baigan with no very intense flavours

    Ingredients:
    Peanuts 1 tb
    Sesame seeds 1 tb
    Coconut powder 1 tb
    Oil 1 tb
    Salt
    Mustard seeds ¼ ts
    Cumin seeds ¼ ts
    Methi seeds 1/8 ts
    Kalonji (optional) ¼ ts
    Red chilly 3 n
    Ginger garlic paste 1 ts
    Curry leaves 2 sp
    Cumin powder ½ ts
    Coriander powder 1 ts
    Chilly powder 1 tb
    Onions 1 n
    Turmeric pinch
    Green chilly 2 n
    Coriander chopped ½ b
    Mint chopped ½ b
    Baingan 150 g
    Yogurt 2 tb
    Directions:
    Heat a pan add peanuts dry roast this in a slow flame, add sesame seeds, dry roast along with peanuts, then add coconut powder, sauté it and put this into the blender, add some water and make a paste.
    Heat oil in a pan add mustar seeds, when mustard seeds splutter add cumin seeds, red chilly, methi seeds, Kalonji (optional), add sliced onions, salt, curry leaves, cook this till onions are golden in colour, add ginger garlic paste cook this till raw falvour is gone, add turmeric, red chilly powder, cumin powder, coriander powder, green chilly, add peanut and sesame seed paste, water, mix it like a thin paste, cook this in a slow flame for 30 minutes, then add chopped coriander, chopped mint, add beaten yogurt, once it comes to boil add eggplant (egg plant cut them into quarters and fry them in the oil) put the lid on and let it cook for 5 minutes, then serve it.

    I followed your recipe for pakoras and everyone loves them!! I'm excited to try this recipe as well. I do have a question, did you shallow fry the eggplant? Can you be more specific in the technique used to fry the eggplant? Thank you in advance and I look forward to your response!

      Aisha Juma just slit the egg plants into four and shallow fry in oil till half done

      Aisha Juma.... Micro wave it for 5 minutes to cook from inside and then heat oil in a kadai 🍳 and fry it in to cook from out side 2 minutes.. By this your brinjal will get super cooked and tasty....or else you will get a feel of uncooked brinjal while eating.....

    Great recipe, and perfect to alternate with the Ennai Kathirikai Kulambu. What do you add to the peanut paste to make it liquid, water or oil? Being vegan I replaced the yogurt with tamarind juice and added some jaggery goor. Very nice!

      ikram mahgoub Peanut butter texture is different and there are peanut crunches in it. Whereas in this dish we are using roasted peanuts powder. You can try and see the difference.

    Puns aside, I rarely get oil to separate in my salans - and I've followed your recipe a couple times. No matter how long it cooks, the best I get is a slight oily sheen. Perhaps I am simply not using enough oil?

      Same here. I put extra oil once, summered for 45 mins, but oil didn't separate. Yet the dish came out very well :)

    You mentioned 1 tb sp oil but in your demo I see at least 12 cup oil. Also with 1 tb peanut, 1tb sesame seeds and 1tbsp dry coconut my quantity of paste was not as much as shown in your demo. Are you using more quantity of everything?

    Hello sir.. I know peanuts and sesame seeds are very important in this dish; but I would like to know is there any substitute for both, as my toddler is extremely peanut allergic and also was asked to stay away from sesame... Your advice is greatly appreciated. thanks in advance

    I make so many dishes with Curd, But I don't know where it says it becomes poison.
