  • Vegetable Dum Biryani is a flavoured rice dish with perfect mix of veggies, masala and rice. This is done by layering the rice and cooking it in dum along with the vegetable masala. Veg Dum Biryani can be best when had with fresh mint raitha or onion raitha.

    Prep Time: 20 mins
    Cook Time: 40 mins
    Servings: 4
    Ingredients :
    Ghee - 3 tsp
    Oil - 1 tbsp
    Cooked Basmati Rice
    Saffron Water
    Fried Onions
    Biryani Masala
    Coriander Leaves
    Mint Leaves
    To Marinate The Vegetables:
    Curd - 1/2 cup
    Turmeric Powder - 1/4 tsp
    Chili Powder - 2 tsp
    Coriander Powder - 1 tsp
    Biryani Masala - 1 tbsp
    Salt - 1 tsp
    Ginger Garlic Paste - 1 tsp
    Onion - 2 nos. (sliced)
    Green Chili - 1 no. (chopped)
    Tomato - 2 nos. (chopped)
    Carrot - 1 no. (chopped)
    Beans - a few (chopped)
    Potato - 1 no. (chopped)
    Cauliflower Florets - 1 cup (chopped)
    Green Peas - 1/4 Cup
    Fried Onions - a few
    Coriander Leaves - a handful
    Mint Leaves - a handful
    Methods:
    To a bowl, add curd, salt, ginger garlic paste and spice powders required for the marinade mix well
    Add the vegetables to this curd mixture and mix well
    Let it marinate for 20 mins
    Meanwhile, soak the rice for 20 mins
    Cook the rice till it is 3/4th done and strain it and keep it aside
    Heat a pan with ghee and oil
    Add the marinated vegetables and saute for 5 mins
    Now close and cook for 15 mins on medium flame
    Cook till the moisture is completely gone
    Take half of the vegetable masala and keep it aside
    Layer the cooked rice on one layer of vegetable masala
    Add the remaining vegetable masala and another layer of rice on it
    Finally add fried onions, coriander leaves, mint leaves, biryani masala powder, and saffron water
    Close the pot and leave it in dum for 15 mins on low flame
    Now turn off the stove and let the biryani rest for about 15 mins
    Serve the Veg Dum Biryani hot with some raita by the side

    This recipe rocks. I made this with cashew yogurt for a vegan version. My wife and son loved it. As others mentioned, I cooked the rice 90% and cooked the rest of it in the dum. Also I added extra salt to the sautéed vegetables so that there is enough salt when you add rice. Overall 10/10 recipe. The vegetables were cooked perfectly and flavorful.

    I cooked biryani once but with different ways. Didn’t marinate the vegetables and add yogurt with biryani masala when cooking veggies. It was also so delicious 🤤 this method looking easy, gonna try this also ❤️

    Thank you! I made this and it was delicious. It was easier than other rcipees which require cooking everything separately. I used butter instead of ghee and cooked the veggies and rice 75% before combining to allow them to finish cooking together. It turned out yummy and my friends were pleased. Thank you!

    Wow! This was amazing. I veganized it and also omitted some of the ingredients that I didn’t have. It was still great! If I had saffron, cilantro, and mint leaves it would’ve been even better but it was still really delicious.

    Mrs Hema... I have seen and followed A LOT of recepies and they are either so complex that it never turns out well or so further that they turn out like pulao rice
    THIS recipe is perfect. Just the right amount of effort for full authentic taste.
    Finally I have fixed my biryani to this recipe.

    I tried this but without the potato or coriander and instead more cauliflower and the rice became overcooked on the bottom layer but also this recipe was so spicy! Will be halving the chili powder quantity next time I try it again. It looked great but I'm sad the spice overpowered the other flavours. Mint was lovely. I also marinated the vegetables for a few hours which likely made the flavour stronger? I don't know

    Flavorful and tasty but by no means quick. Chopping veggies, getting the fried brown onions done takes time. Carve out at least 1 hr 45 mins to do this from start to finish.

      The spices are added to the vegetable marinade and there are green chillies .. this should do if you like it more spicy you can add it according to your taste

    What if I marinate the veggies much longer? I ask because sometimes is more practical to split preparation in 2 stages to speed up the process
