Michael’s easy lasagna | Quick tasty meals for families

- Today on The Bates Kitchen, I’m in the kitchen with my sister Michael, @KeilenCorner who is a pro at feeding a crowd! Growing up, Michael could whip up a meal for 30+ people in an hour, and this lasagna is one of her go-to meals. Fast enough to throw together in time for dinner (boil regular lasagna sheets) or perfect to stash a few in the freezer for when needed (use the oven ready sheets and water the recipe calls for). This is also the perfect recipe to give to someone if you are the kind of person that takes meals to families when sick or after a birth etc, you can put it together and they can cook when they need! It’s hearty, comforting, and perfect to make ahead for busy weeks or big family gatherings.
We’re layering rich red sauce, a creamy cheese mixture, and oven-ready noodles to create a lasagna that’s both easy and delicious. Whether you’re feeding a crowd or prepping for the week ahead, this recipe has you covered.

Red Sauce Ingredients:
• 1 lb ground beef
• 1 lb ground turkey sausage
• 1 32 oz jar spaghetti sauce (4 cups)
• 2 tsp minced garlic
• 1 onion, diced small
• 2 tsp oregano
• 2 tsp basil
• 1 tsp Italian seasoning
Cheese Sauce Ingredients:
• 32 oz cottage cheese
• 2 eggs
• 1/2 cup Parmesan cheese
• 1 tsp basil
• 1 tsp oregano
• 2 tsp Italian herbs
• 1/2 tsp minced garlic
• Salt, pepper, and red pepper flakes to taste
Other Ingredients:
• 1 box oven-ready lasagna noodles
• 3 cups mozzarella cheese
• 1/2 cup water
Directions:
1. Preheat your oven to 360°F.
2. For the red sauce: Sauté onion and garlic until translucent. Add ground beef and turkey sausage, cook until browned, and drain any excess fat. Stir in the spaghetti sauce and herbs. Let it simmer on low while preparing the cheese sauce.
3. For the cheese sauce: In a large bowl, mix cottage cheese, eggs, Parmesan, and seasonings until combined.
4. Assemble: Layer red sauce, oven-ready lasagna noodles, and cheese sauce. Repeat until your dish is full, ending with a layer of red sauce. Top with mozzarella cheese.
5. Pour 1/2 cup of water evenly over the top (this helps the noodles cook perfectly).
6. Bake for 45-50 minutes, uncovered, until bubbling and golden on top.
7. Let rest for 10 minutes before serving.
*Michael normally rinses the sauce jar out with a bit of milk. If cooking in a hurry, pre boil regular lasagna sheets, omit the half cup of water, and reduce cooking time to 25-30 minutes!
Pro Tip: This lasagna freezes beautifully! Assemble it ahead of time, without water, cover tightly, and freeze. When ready to bake, thaw overnight, add water, and bake as directed.

@@annaraeellison3417 I learned how in Indiana, too. I never heard of ricotta growing up in my small town. We mostly ate whatever my Grandparents produced on their hog farm. They had fresh chicken, eggs, pork, and garden veg. I thought we were poor because our food didn’t come from the store. 😂

Growing up my mama always used cottage cheese in her lasagna. I didn't know it was made any other way until I was older. I started using ricotta a few years ago. My son's birthday is coming up and lasagna is what he wants for his birthday dinner. I enjoy seeing the two of you in the kitchen and talking about things from your childhood. Thank you for sharing.

It was nice to see someone use cottage cheese. That is how I was taught some 30yrs ago. Then someone said ricotta cheese was supposed to be used so I made it with ricotta once and went back to the cottage cheese. It was a texture thing for me.

Another great video with Michaela! I don't care too much for Ricotta either so I have always used cottage cheese, too. I also add ground Italian sausage with the ground beef. Love when Michaela is on the channel! Love you all! A hint for the pasta! I get regular lasagna pasta! I put it I a pan that it fits in laying as it is used! I cover it with almost boiling water let it sit 15 minutes! It is still stiff but it is always perfect when I serve it! I have a HotPot that give me tea making hot water and that’s what I use! I love it! Blessings for the New Year!

Ok, now that sounds right up my alley!
@ so easy!! Replace red sauce with Alfredo sauce (home made or our favorite Prego) and you can even grab a rotisserie chicken already cooked at the store and shred it instead of hamburger meat. Everything else you could keep the same!
I made this yesterday and everybody liked it. When my two teen grandsons came home from school they had a great after school meal and loved it.

We make a similar lasagna with cottage cheese! Only thing different is we make a homemade red sauce , with crushed tomatoes and one large can of tomato paste and then all the spices ! Will have to try this recipe 😊

Zach, I make mine with cottage cheese instead of ricotta cheese because I don’t care for ricotta. It’s delicious! I agree with Michaela it’s so much better with the cottage cheese and kids love it. I haven’t tried the noodles that you don’t boil because I’ve been afraid they wouldn’t get done enough but now that I seen she added a small amount of water 💧 I’m definitely going to try them.

I did not like lasagna at all growing up but I was pleasantly surprised wasting this one a couple years ago at the big house and have wanted to share this recipe ever since I started! I’m so glad Michael could come and share!
OH MY GOODNESS! This looks delicious and will be something I will try. I haven't eaten lasagna in years as I always felt it was too much work, but this looks easy and delicious. Thank you so much, Michael, for sharing your recipe and your beautiful heart with us. I want to also say I made the wheat bread recipe a couple of days ago (getting ready for the storm to hit this weekend). I make bread a lot but have never found a recipe that made true slicing-for-sandwiches bread until this one. It was THE BEST bread ever not only in consistency but in taste! We made sandwiches that night and everyone thought the same about how wonderful it is. It will be a new recipe added to my semi-weekly baking day. I like Zach's cheese philosophy. Looks so delicious! We use cottage cheese too.
I've never used ricotta ONLY cottage cheese! In my opinion it makes the lasagna taste way better, I chop fresh basil or parsely and grated parmesan and fold it into the cottage cheese. Friends and family love my lasagna! Delicious 😋
Their closer then most of the siblings are to them cause they also admit that cause their age and growing up close together that they did alot of everything pretty much together.

I love the idea of cottage cheese instead on ricotta cheese. I am going to try that for my manicotti recipe. I add meat to my manicotti so I think the cottage cheese will actually be better them the ricotta cheese. I love watching your channel and learning new recipes that I can share with my family. I am trying to learn to plan some meals ahead for those days where my pain levels are just so high that i literally don't want to move. This would be great to make she's and have ready so i can just throw it in the oven and boom an hour later it's ready and delicious. I love you two cooking together. I make lasagna similar I combine ricotta and cottage cheese and Italian blend cheeses with mine. I also do the sausage and beef mixture together gives it more flavor. The other thing i do different is i put all the layers in one instead of alternating. Love Michael and Zach together.

My mother used cottage cheese in her lasagna. I grew up, thinking that was the only way to make lasagna. That is until I tried ricotta. I prefer ricotta, provolone cheese but when I eat it with cottage cheese, it brings back memories of my childhood and my mom cooking it in the kitchen. She will let us children grate the mozzarella. I think we ate as much as we grated. Sweet memories. Love watching you two cook together.
Those are such sweet memories! That’s how grating cheese works in my house!
