Alle Belle | Jaggery & Coconut Pancakes | Crepes

  • Alle Belle: These Jaggery-And-Coconut stuffed pancakes (or crepes) have been a favorite tea-time snack for many Goans. The pancake batter is super quick to prepare and even the cooking time is short. I have memories of my kids stuffing their own pancakes with the 'choon' (the coconut and jaggery filling) when young to growing up and trying their own hand at attempting to create the roundest crepes! Meals and moments can tell a story, if we only choose to listen :)

    Ingredients:
    1 Cup Maida (All-purpose Flour), sifted
    Salt to taste
    1 Whole Egg
    1/2 teaspoon Vanilla Essence
    1 & 1/4 Cups Water, adjustable
    Vanaspati/Ghee for frying
    For the filling (called 'Choon' in Konkani):
    1 Cup fresh, grated Coconut
    1/4 Cup Cane Jaggery
    1/4 Cup Palm Jaggery
    Tips:
    -Ensure that the batter is lumps-free. Sifting the flour helps. Prepare a thin batter by adjusting the water as needed.
    -Keep the flame on Medium-Low. Grease the pan with some Ghee/Vanaspati.
    -Stir the batter each time before ladling.
    -Control the flow of the batter by swirling the pan. It may take a few tries to get it right.
    -If the batter doesn't seem to flow easily, add a little more Water.

    Oh my god we have similar food in southern Philippines, it so identical. We called it "Daral" specifically prepared by tausug tribe. We also eat it alongside native black coffee. Its yummy!

    Love these!is it ok to add a bit of dates n nuts to the stuffing?and what if I can”t get hold of palm.jaggery but have only cane jagg.?Thx dear Florency for this lovely yet simple recipe.....last ques...instead of adding water to.make the batter...would it be ok to use thin coconut milk instead?

      Yes, you can use wheat flour for the same. The texture may end up a little different, and the colour may be on the darker side, but it will be just as enjoyable. Remember, aim for a thin batter; wheat flour may require more water. Hope this helps💫

    looks so soft and delecious... It has such a smooth and sweet character of its own which can make anyone fall in love with it . . . I'm gonna replace egg with baking soda / powder.. will that be fine Florency ?

      You're right about the texture, they are super soft and absolutely delicious :) Thank you✨
      I read your comment and immediately gave it a try without eggs to see whether or not it works. Your idea of adding baking soda (about 1/4th of a teaspoon) seems to work well (without baking soda it's very ordinary). Another thing I also tried was adding milk. If you're not vegan, you can add some milk (plus baking soda) instead of water for some added flavour.
      Hope this helps 💫 and thanks for the idea and query, I had fun experimenting 😄

      waiting for Vanilla and Chocolate nuts ice-cream to get over first ( made it yesterday, and it's as good as Baskin Robins, but a lot healthier than it. )

      @@FlorencyDias Another experiment with this would be to try adding a few drops of vanilla/ kewra/pineapple essence to the batter, to give the wrapping a unique taste. It would definitely be no more authentic and traditional..but, something new would come out of it. Another variation could be: try adding a pinch of freshly crushed black pepper to the Choon or even a pinch of Ginger powder. It will add a good flavour and a mild punch to the sweet taste of Choon.

      Thank you very much for your interest in the recipe and the gracious compliments! I'm glad that you would like to give it a try. I just received a query from another friend in the comments, who asked if the eggs can be eliminated and if some baking soda can be used. I experimented to find that it works out fine! So skip the eggs, and just add about 1/4th teaspoon of Baking soda to the mixture. If you would like some more flavour, you can try the recipe with milk instead of water (or half water, half milk).
