I still feel we should improve our meat cuts ...just like we have lamb-chops/PorkChops /Prime Ribs /Brisket etc we should have the same for the goat i stand to be corrected . Roasting leaner meat cuts works very well quickly cooked and marination is perfect . I did not know the idea of using water only know of using oil, spices, rosemary etc

Never marinate choma on open fire, the meat becomes hard and shrinks especially with salt.
Marinating steak is western world style.
