I actually used this recipe, only I switched out the blueberries to peaches and it was a-mea-zing. I also added some basil and it really nicely balanced out the sweetness of the peaches and ugh, it was just so good :P
I actually made this pie, and it was honestly the best flavor of any blueberry pie ive ever had. I served it with homemade cream on the side, which I made by whipping double cream with cream cheese, sugar, and vanilla. it was SO good guys 😳 definitely worth making

I have four plums that were perfectly ripe a few days ago and that are now languishing in my fridge because I got sick and couldn't make plum cake. I also have five pounds of frozen blueberries, two pounds of fruity local honey, and an insatiable desire to make a pie. These things are going to combine today, and I'll tell you how it goes.
Add a couple tablespoons of cold vodks to your pie dough... guarentee no cracking.. Too much water makes for tough dough because gluten forms in water but pie dough cracks because it is dry. Gluten formation is inhibited by alcohol which will burn off in baking.
I've tried that Kenji trick a couple of times & it's easy to roll out but I noticed the crust has a tendency to shrink once it's baked (even after it's had a proper rest), so you'll have to compensate with a wider overhang. Stella Parks has a great recipe where she encourages just enough gluten formation.
My SIL asked our mom to teach her how to make apple pie. In her first attempt she kneaded the pie dough so hard she squeezed water out of it. How do you get water out of flour and butter? Amazing. LOL

Usually Carla doesn’t disappoint but she did in this vid :/ I have hot hands and I work in pastry. It is very annoying to have butter melting in your hands all the time. Always use a food processor to make pie dough if you do have hot hands and save yourself the grief.

i recommend buying a pastry scraper (plastic one), you can use it to cut the butter into smaller pieces (so less touching, less heat on the butter). looks delicious but blueberries are so expensive in my country...
blueberries are relatively expensive in the United States as well. best to have your own tree(s). if you know someone who has one, you can ask to get a couple of their shoots.

Apple pie with cinnamon, peach pie with brown sugar served with cream, pumpkin pie, pecan pie, sweet potato pie with marshmallows, and coconut creme pie all are good options! Obviously you'll have to look up (or make) a recipe for the filling yourself, but you can still use the same techniques used in this video.

I adore Carla, she makes me think of like, this fun teacher type of person that you both adore for their sense of humor, warmth, and fantastic ability to teach, and then you also respect immensely. I've never made pie, I kinda want to try for the next time we have a family dinner, I usually leave baking to my cousin because my baking is disastrous haha.
I've never been much of a cook or baker, and I'm notoriously very clumsy in the kitchen; but this video made me really want to try my hand at pie baking! I tried a different filling, since I'm not a fan of blueberries, but it turned out amazing! The process of making the dough was fun and I'm honestly hooked. I've never made pie before. Sounds like an effective way to break up the butter. But it would make all of the butter pieces would be one size. In the video Carla said you need variation in size to make the pie both flaky and tender

Have a look at some of the keto channels. They aren't intentionally gluten free but they can give you a good starting point. Low Carb Yum, Keto Connect and TPH Keto Desserts all have recipes I've tried. Mind you I'm diabetic and not gluten intolerant so I'm looking for different things than you would be.
Considering that the dough-making process doesn't encourage gluten formation I'd say that you'd get a pretty great pie with gluten free flour. Corn or Potato flour should work fine. I'm thinking about making a vegan version with margarine instead of butter, just need a way to substitute egg wash. But it's still a great base!

CARLA, the BA recipe for the pie crust is magnificent. I knew because of the altitude in Salt Lake City I had to adjust the liquid measurements but other than that it took me 45 mins to make 4 crusts and they turned out excellent. Definitely one of the best crusts I’ve ever made and they turned into wonderful apple and pumpkin pies for Thanksgiving. Thanks Carla and BA
A tip for those who are afraid to roll the dough and move it around too much: right after you prepare it, transfer it to the tin (since the butter isn't frozen it's a bit easier to mold it to the shape of the container) and once it has the shape you like pop everything in the freezer for a good 30 mins and then it's ready to go.
Carla, you convince me that I’m not a bad cook but I can surely get better! I thank you for sharing the benefit of your education and experience. You prove what some people today don’t seem to remember; you can be a full on, trained chef and produce life sharing high quality meals. But if you get haughty or arrogant about your skills, you lose the humanity and love put into truly nourishing food that feeds your soul as well as your belly. Looks delicious! I've made pie crust once (I don't bake often) and it was easy. If you're concerned with making the crust, give it a shot. If I can do it, you can do it.
Tried this!! Pie's in the oven now, I'm pretty sure I made mistakes along the way but a BIG THANK YOU for giving me the courage to try it again after my last super failed attempt. At least I got it in the oven. My crust keeps breaking apart though-I might have put too few iced water+vinegar into the mixture.

This aged pretty poorly
A tip for those who are afraid to roll the dough and move it around too much: right after you prepare it, transfer it to the tin (since the butter isn't frozen it's a bit easier to mold it to the shape of the container) and once it has the shape you like pop everything in the freezer for a good 30 mins and then it's ready to go.
This is exactly what I do and it works way better than how she did it in the video.

You prove what some people today don’t seem to remember; you can be a full on, trained chef and produce life sharing high quality meals. But if you get haughty or arrogant about your skills, you lose the humanity and love put into truly nourishing food that feeds your soul as well as your belly. Cooking feeds the cook too and it’s supposed to be fun! You, my good lady, embody that, in my opinion.

Looks delicious! I've made pie crust once (I don't bake often) and it was easy. If you're concerned with making the crust, give it a shot. If I can do it, you can do it.

Tried this!! Pie's in the oven now, I'm pretty sure I made mistakes along the way but a BIG THANK YOU for giving me the courage to try it again after my last super failed attempt. At least I got it in the oven. My crust keeps breaking apart though-I might have put too few iced water+vinegar into the mixture.
