    I’ve just made this for dinner and all I can say is yum, yum and yum.
    Recently bought an instant pot. I came across your recipe when searching for ideas to cook. Have also been wanting to cook hainan chicken rice. Glad to find your recipe. This will be a regular dish in our house. Hubby loves it too. Such a comforting home cooked meal and easy to prepare too with instant pot.
    I used frozen chicken and increased the cooking time by 10 min. The chicken was so tender and delicious. The shallot ginger sauce makes the dish to another level.

    As a Malaysian, Hainanese chicken rice is my favorite and easy to come by. It can be purchased from food stalls easily. With your simple recipe, I will definitely try cooking this dish.

    We have a dish like this in Hawaii. We just call it Cold Ginger Chicken. Seems only difference is the chicken is refrigerated. Love how you simplified the recipe to make it in the pressure cooker!

    Thx for your video-loved it. I cook rice in my IP in a 1:1 ratio for 3 min. then natural release. And regularly make stock w/ leftover chicken bones in the IP, 1 hour cook w/ natural release.

    What's up Maggie! Always love your greeting...and Hainanese chicken paired with tons of ginger scallion sauce. Thank you so much for another wonderful heart warming and traditional family dish. I didn't realize the cooling with the ice bath but now thanks to you, my chicken will be cool, tanned and 'sunscreened' with lots of ginger scallion sauce to a glisson shine!

    I'm a Hainanese, many of you have said white chicken is too dry,the fact is many don't know how to cook a moist white chicken(白斩鸡)❗

    I bought a jar of CHNG KEE'S
    Hainanese Chicken Rice Mix last week, it's very easy, just add 2 Tbsp of this mix to the rice in the rice cooker. The rice comes out exactly like it's from a restaurant.

    Hi. Thank you for this easy and simplified recipe. I can’t wait to try it out. Can I use 4 pieces of chicken instead of the three you use here. What other ingredients should I adjust to cook 4 pieces of chicken?

      If the additional chicken quarter is small you can try leaving the rest of the ingredients the same. It may be result in more flavorful broth for the rice! If it is a big chicken you can try increasing all the ingredients by 15-20%. Hope that helps!

    Looks real yummy. I bet it would taste great with a recently fresh live chicken. For those who don’t have an insta-pot, I request the other method. Besides the char siu, chicken prepared different methods are a staple for me. My favorite is mun chicken in gravy with mushrooms over rice.great job, Maggie

    I was using my free range chicken which has meat much tougher than commercial chicken but a lot more tastier. I end up having to pressure cook a second time for ten minutes.
    Will let you know if it turns out the way that what’s I like.

      DARK....white I always find a lil too dry 🤷🏽‍♀️

      Dark is more moist. White is a bit more dry. Tons of ginger scallion sauce goes well with both!

    Great video!
    I’ve tried cooking the chicken rice in a rice cooker and in an instant pot and I always get burnt rice at the bottom. Using a 3 minute program on high pressure on the IP gives me that dreaded burn notice when it comes to pressure. When cooking in a rice cooker, I find the cooking time is shorter than when I cook regular white rice but when I lift the lid, the rice is still soggy on top and burnt on the bottom. Any tips on how to fix this?

    To save clean-up, I'm wondering, after removing the chicken and broth (to strain) could you:
    1. Heat the oil to make the ginger sauce, then...
    2. Render the fat from the skin, add the onion bits from straining the broth, then COOK the rice in the Instant Pot (usually takes only 5 mins, I hear) while deboning the chicken??

    I would paste up the chicken with yogurt and brown in the oven for colour and texture...10 15 minutes..

      Yogurt? Nobody ever used yogurt for authentic hainanese chicken my guy, you can do you but, I couldn't call that hainanese chicken, what do you dip it with ketchup? 😂 what's next, you gonna go to Italian cuisine channels and tell them you add shrimp paste to spaghetti lol

    We have something similar in India and it's ridiculously good.. The sauce is hot seriously hot but the chicken and rice are similar only you NEVER cook the king of rice,basmati, in a rice cooker. Funny how Asia and India have very similar dishes. :-)

    Ok Ms Maggie im all about short cuts and i wash chicken but i watch several people cooking from Vietnam Cambodia and Thailand and they always wash meat with salt fish prok chicken duck what does the salt do i try to avoid salt my wife stays on me about it am i messing up or missing something buy just washing it in water ive had this dish before in a place in California it is very good please stay safe and happy see you in the next video

    The Singaporean Hainanese Chicken Rice includes the scallion ginger oil sauce and 2 others: garlic chili sauce and a dark, thick, slightly sweet soya sauce. These 3 sauces are like the holy trinity of chicken rice! If you haven't tried it, please do!

    It takes 10 minutes to pressure cook and 15 minutes to de pressurise the cooker ?? Dosnt your cooker have a pressure release valve , who wants to wait 15 minutes after cooking to get
    The food out ??
