I haven't eaten raw oysters since 2010....I made a deal with God and I intend to keep it. After decades of eating raw oysters at about every oyster bar I could find, I had "the bad oyster" one night out in summer 2010. I spent the night on my bathroom floor praying to live as it was coming out both ends. I made a deal with God that if he got me through the night I would never eat another raw oyster...so far I've kept the promise.
The fun part is that cooking doesn't save bad shellfish. If the water is polluted or there's a red tide you will get sick regardless. I got it once from canned clams.
Something to consider is that Oysters are filter feeders, so they clean a massive amount of water, over fishing basically removes them from the environment causing it to literally break down and species that lives there disappears within a decade or two. The cleaner the water from the filtering process the more sunlight reaches the bottom which helps more species thrive.
That is why they are sustainably farming them now and not destroying the natural wild oyster reefs anymore. The damage was already done in the past, the modern oyster industry is helping to clean the chesapeake bay.

Great viewing as always, I'm sixty-four now and in the West of Scotland's rich waters we used to put our mussels,clabbydhu's (giant mussels) and other bivalves into buckets filled with the sea water and flour added so the flour flushed out the digestive system. Have a look at the Oregon State University's method of Enhanced Depuration Researchers, led by Professor Yi-Cheng Su who tweaked the depuration process to improve its effectiveness. A similar technique has been used in the United Kingdom for decades now for small to industrial solutions. But the attention to detail in the farmer here will be a thing to learn from and maybe improve for sustainability. Thanks to ALL who made this possible.
Virginia is currently the largest producer of oysters in the United States, but all oyster sales annually only make up ~5% of our $1.1B seafood market (~$60m in oyster sales annaully). Oysters are quite common here in Virginia, but in reality they account for very little of our economy (There's ~134 Oyster farms inside virginia as of January 2024). The entire agricultural industry in Virginia has an economic impact of $82.3B meaning Oysters account for 0.073% of the annual agricultural value.
Loved this episode! I grew up in coastal central florida and now live in south eastern coastal Virginia and oysters are my favorite! A bushel of oysters is a party/bbq staple for my family. Oystering near the mouth of the Suwanee River was forbidden for years because the water going into the Gulf was full of bacteria. Then they cleaned up the river and it was resumed. After a few years… I think they wiped out the oysters as I haven’t seen any offered from that area. Not sure.

We are so far inland that these are rarely available to us in safely fresh form. I've had raw oysters several times, though, and found them absolutely delightful, with or without adding junk on top of them. Raw oysters are NOT, I repeat they are NOT slimy! They are firm and they taste of sea water, extremely delicious. When I lived on the Texas coast there was a small dockside establishment that served "Oyster Burgers". These were fresh-caught, deep-fried oysters on a hamburger bun with lettuce, tomato, onion, and Louisiana hot sauce. I love the Arkansas Ozarks, but there are some things about the sea coast that I sorely miss!
That’s why i only eat oysters in the winter or early spring. Plus they’re much more fatter and sweeter then. Summer oysters are skinnier and prone to diseases in warmer temps and that’s why so many people get seafood poisoning during the summer seasons.
And they're not very good tastewise. I don't know how you say it in english, but in France we say they're "milky" (laiteuses) cause of the colour / texture theu take at this period of the year. But you can smoke them on the side of a BBQ fueled by vine branches.
The Bay once was just laden with oysters everywhere they could grow. There were oyster mountains in deeper water. They were harvested so heavily the bay was almost ruined. I remember even in the 70s they harvested so many they gave the shells away free by the truck load from sea food plants. My grandfather had an oyster shell drive way at his Maryland home. I recall the driveway reeked of rotten fish for a while before the odor went away. The shells were good driveway alternative to gravel, they broke and compacted themselves as you used it and became a very good surface after a couple years. Those days are gone forever.
Virginia Beach/Norfolk/Newport/Williamsburg (Different cities but all jammed right up next to each other) and Richmond are always the place to go for fresh oysters. Glad to see someone giving them some love.
One of my relatives is friends with the owner of an oyster farm in Virginia, and when he ordered 25 oysters to bring for Thanksgiving, he received a large iced box with 100! We had to shuck them for 8 adults and none of the kids wanted any. I know we the three shuckers ate at least two dozen each and learned our limit. I like them with freshly squeezed lemon and champagne vinegar mignonette with shallots, horseradish, and black pepper.
Omg! That sounds like a delicious combo on oysters - I'll have to try that out! If you love trying different combos, look up this hot sauce company called, Vatsana's! They have an authentic Laotian seafood sauce (Vatsana's Citrus Hot Sauce) that also pairs well with oysters - any dishes really! Yum!

Often the baby oysters are stuck to the big ones and flake off when you scrub them. I feel guilty washing them down the drain but they're too tiny to eat and we're far from the sea coast.
I have had vibrio two times because I'm a commercial oysterman. Once the water temperature of reads is 70°you have to handle everything alright. The bacteria off of their shell got in my eye and almost lost my eye because of it.
@@jonmacdonald5345 Im allergic so havnt tried them but everyone always says they are so much better raw, but the thing I notice is people slurp them and dont even really chew and usually has a ton of sauces etc on them so if they are so good why not actually eat them instead of the quick slurp to get them down quick? and so much sauces that how in the world are you tasting anything? Interesting. I own a house on the water in lower Potomac/upper Chesapeake Bay where I grow my oysters exactly like this off my dock. What I didn’t hear in this video is how these multi million dollar oyster companies submit applications to start new farms encroaching on the water rights at the water front homes that people pay a lot of money for. The HOA of the creek that my house is on is fighting one of the local oyster companies who submitted 3 - 4 applications to implement football field size fields. Several were submitted at the mouth of the creek, preventing Bay access. Doing this basically ends water recreation by the home owners who live in the coveted areas. Other than that chief complaint, the oysters are wonderfully sweet and delicious and so are the blue crabs that are abundant. BTW the above information is a matter of public record.

Thanks for visiting Virginia! There is a seafood culture here that most people don’t realize. We have “going down the rivah “ instead of “going down the shore”. Crabs and oysters from the bay and lower rivers are outstanding. BF and myself are in northern Virginia outside DC, but make it a point to rent a rivah house in the necks every fall during oyster season.

I'm going to speak for myself (I assume others feel the exact same way)...some of the food you experience makes my stomach turn. I have, however, had raw oysters on the half shell (I was pretty intoxicated). But those oysters that were simmered in their own shell with the various butters...that is now on my list of things to try.
Raw oysters are as good as they are fresh. If you're near the water they came from, pretty good bet they'll be delicious. If you're landlocked, stay the heck away
Oysters are so much more savory and fragrant when cooked. I steam them and it's like the cleanest purest ocean just washed up in my kitchen. I would definitely try the butters too, though they are perfect just in their own juices as well.
This series is great my favorite is sunny trolling around his yeti and looking to fill it up full of amazing seafood. Product placement aside it's truly a high quality cooler and I love that it's getting used.
Do these oysters not get put through a cleaning process to lessen the chances of bacterial issues? Oysters are grown also in Scotland but commercials ones are put through a system where they are put in some kind of saline baths for a couple of days to cleanse them of any bacteria/toxins.
As an oyster freak who has eaten them just about everywhere in the world. I rate Chesapeake oysters about a 6/7. Gillardeau from France and the Quilecene and Olympia both from Puget Sound in Washington are tops on my list.
Bet you haven't tried Bluff oysters from the bottom of the south island in NZ. The quality and size has diminished over the years sadly. But they were some of the world's best imo.
Great video. Maryland and Virginia do not get the attention they should for their seafood. New Orleans thinks they have it on lock fown. I love NOLA but they think you boil seafood. Marylanders know you steam it. 😅
More people die from choking than eating oysters because everybody EATS, but only a small minority eats oysters, so considering that 100 people dying from oysters is still A LOT even if you compare it to the 5000 from choking. Also the data you presented didn't say you're more likely to die from choking on an oyster than getting food poisoning from an oyster, it just said that there are more overall deaths from choking than from food poisoning on an oyster. Do you honestly think more than 100 people each year choke on an oyster and die?

Virginia oysters may be plentiful but they're not great. Get yourself out to cape cod and try a Wellfleet oyster. It will set a standard you'll never top.
It is my favorite since i was young i really ate it fresh right away every time i went on the ocean a rocky wide shore in my province of Leyte at Philippines,i like to went on the shore to pick some different shells and one of it is the Oyster but at my young age i dont know the name & we had own language which is we called it “tikod tikod” i love to remove it from the rock because its hardly stick on.❤❤❤
Leave it to the Yanks to slam Asian and Canadian oyster producers to try to enhance their own product. Typical. Globally the Eastern Oyster doesn’t register on the taste rankings. Sorry! The flavour of the Canadian Malpeque oyster wins hands down, even though it takes longer to grow oysters. Check out Paris’ International Exposi-tion to cross reference.
Clams are so underrated. I think Warasaw in poland uses clams to determine water quality from a river to see if its safe since when clams detect something bad in the water they close shut

The 'trick' to eating raw oysters is to *ONLY* eat fresh ones, and avoid buying them during the warmer months. Here in the Pacific NW, my 'safe months' are late November through early March. In almost 40 years, I've never got sick! And I *GORGE* myself on them, scarfing down a couple dozen (or more!) with each sitting. _A little fresh lemon juice and some 'Franks' hot sauce, and it's _*_REALLY_*_ hard to stop once I get started!_ *I LOVE THESE THINGS!*

Virginia is definitely the best place in the world for oysters. this farm is on the chesapeake bay off the mainland - the western shore. Im from the eastern shore, the little peninsula that separates the bay from the atlantic, (everyone seems to forget about us) and we grow them here too, natural and farmed. slightly different taste here though. absolutely nothing compares to fresh seafood caught and eaten the same day
Yesterday I noticed that the sponges in Newport Richey Florida have blue green algae and some of the scallops have blue green discoloration , how can I tell if they are safe to eat ?
As someone who used to work with local oyster farmers in the Yorktown, Virginia area i can say they are the nicest, and most hardworking family companies out there. #savethebay
I knew a guy who died from eating a contaminated oyster here in New England. An old timer told me to drink a glass of apple cider vinegar before eating any seafood and you won’t get seafood poisoning. I will do that now and then and having eaten seafood for years I think I’m one of the lucky ones.

Often the baby oysters are stuck to the big ones and flake off when you scrub them. I feel guilty washing them down the drain but they're too tiny to eat and we're far from the sea coast.

I have had vibrio two times because I'm a commercial oysterman. Once the water temperature of reads is 70°you have to handle everything alright. The bacteria off of their shell got in my eye and almost lost my eye because of it.

Interesting. I own a house on the water in lower Potomac/upper Chesapeake Bay where I grow my oysters exactly like this off my dock. What I didn’t hear in this video is how these multi million dollar oyster companies submit applications to start new farms encroaching on the water rights at the water front homes that people pay a lot of money for. The HOA of the creek that my house is on is fighting one of the local oyster companies who submitted 3 - 4 applications to implement football field size fields. Several were submitted at the mouth of the creek, preventing Bay access. Doing this basically ends water recreation by the home owners who live in the coveted areas. Other than that chief complaint, the oysters are wonderfully sweet and delicious and so are the blue crabs that are abundant. BTW the above information is a matter of public record.

Thanks for visiting Virginia! There is a seafood culture here that most people don’t realize. We have “going down the rivah “ instead of “going down the shore”. Crabs and oysters from the bay and lower rivers are outstanding. BF and myself are in northern Virginia outside DC, but make it a point to rent a rivah house in the necks every fall during oyster season.

I'm going to speak for myself (I assume others feel the exact same way)...some of the food you experience makes my stomach turn. I have, however, had raw oysters on the half shell (I was pretty intoxicated). But those oysters that were simmered in their own shell with the various butters...that is now on my list of things to try.
Raw oysters are as good as they are fresh. If you're near the water they came from, pretty good bet they'll be delicious. If you're landlocked, stay the heck away
Oysters are so much more savory and fragrant when cooked. I steam them and it's like the cleanest purest ocean just washed up in my kitchen. I would definitely try the butters too, though they are perfect just in their own juices as well.

Tómales bay oyster are farmed in a great environment clean fresh water unlike the east coast waters
Do these oysters not get put through a cleaning process to lessen the chances of bacterial issues? Oysters are grown also in Scotland but commercials ones are put through a system where they are put in some kind of saline baths for a couple of days to cleanse them of any bacteria/toxins.

As an oyster freak who has eaten them just about everywhere in the world. I rate Chesapeake oysters about a 6/7. Gillardeau from France and the Quilecene and Olympia both from Puget Sound in Washington are tops on my list.
Bet you haven't tried Bluff oysters from the bottom of the south island in NZ.
The quality and size has diminished over the years sadly. But they were some of the world's best imo.

More people die from choking than eating oysters because everybody EATS, but only a small minority eats oysters, so considering that 100 people dying from oysters is still A LOT even if you compare it to the 5000 from choking. Also the data you presented didn't say you're more likely to die from choking on an oyster than getting food poisoning from an oyster, it just said that there are more overall deaths from choking than from food poisoning on an oyster. Do you honestly think more than 100 people each year choke on an oyster and die?

Virginia oysters may be plentiful but they're not great. Get yourself out to cape cod and try a Wellfleet oyster. It will set a standard you'll never top.
It is my favorite since i was young i really ate it fresh right away every time i went on the ocean a rocky wide shore in my province of Leyte at Philippines,i like to went on the shore to pick some different shells and one of it is the Oyster but at my young age i dont know the name & we had own language which is we called it “tikod tikod” i love to remove it from the rock because its hardly stick on.❤❤❤

The 'trick' to eating raw oysters is to *ONLY* eat fresh ones, and avoid buying them during the warmer months. Here in the Pacific NW, my 'safe months' are late November through early March. In almost 40 years, I've never got sick! And I *GORGE* myself on them, scarfing down a couple dozen (or more!) with each sitting.
_A little fresh lemon juice and some 'Franks' hot sauce, and it's _*_REALLY_*_ hard to stop once I get started!_ *I LOVE THESE THINGS!*

Cool to see how its done on the East Coast. From Louisiana on the Mississippi Delta where the oysters are awesome as well, but the best i ever had raw came from up north.
Best cooked ones iv had where in New Orleans. Best raw, vancover island BC canada(where I live) and The queen Charlotte Islands. Cold, clean water.

Virginia is definitely the best place in the world for oysters. this farm is on the chesapeake bay off the mainland - the western shore. Im from the eastern shore, the little peninsula that separates the bay from the atlantic, (everyone seems to forget about us) and we grow them here too, natural and farmed. slightly different taste here though. absolutely nothing compares to fresh seafood caught and eaten the same day

I knew a guy who died from eating a contaminated oyster here in New England. An old timer told me to drink a glass of apple cider vinegar before eating any seafood and you won’t get seafood poisoning. I will do that now and then and having eaten seafood for years I think I’m one of the lucky ones.
