  • Jamaican Fricassee Chicken
    4 Chicken Breasts
    1 tbsp Crushed Pimento
    2 tsp Chicken Seasoning
    2 tsp Adobo Seasoning
    To make Adobo Seasoning
    2 tbsp Salt
    1 tsp Paprika
    2 tsp Ground Black Pepper
    2 tsp Onion Powder
    2 tsp oregano-dried
    2 tsp Cumin powder
    2 tsp Garlic Powder
    1 tsp Chilli powder
    Mix them and that’s it.
    1 Green Bell Pepper julienned
    4 Garlic Cloves sliced
    1 Scotch Bonnet
    4 Spring Onions sliced
    1 Carrot julienned
    1 Large Tomato cubed
    1 tbsp Dark Soy sauce
    1 tsp Browning.
    3 Sprigs Thyme
    400ml Chicken Stock
    Cut the chicken into bite-size pieces, wash in lemon juice and white vinegar, rinse in water pat dry with kitchen paper and add to a large bowl.
    Season the chicken with salt and pepper, all-purpose seasoning, adobe seasoning and the sliced garlic. Mix well with your hands, wash your hands cover the chicken with plastic wrap and leave to marinate for a minimum of 30 minutes but best overnight. Add 2 tablespoons of vegetable oil to a large sauté pan and add in the chicken pieces once the oil is hot, try and remove the garlic slices to avoid them burning which will give a bitter flavour.
    Brown the chicken pieces on all sides for about 5-6 mins turning constantly. While the chicken is browning add the carrots, onions, spring onions, thyme and bell pepper into the seasoning bowl and mix. Once the chicken is browned add it to the large bowl will the rest of the ingredients. Pour in the dark soy and browning and mix well.
    Return all the ingredients to the sauté pan and cook for two minutes. Pour in the chicken stockand add in the whole scotch bonnet, reduce the heat cover the pan and allow to simmer and reduce for 30 minutes.
    After 30 minutes if the sauce has not thickened to your liking mix 2 tsp of cornflour with a little water, stir and stir into the sauce, after 2 minutes the sauce will have thickened. Remove the scotch bonnet.
    Plate up, and serve with rice. Lick you’re lips and enjoy 😋😋

    Hungry now. Would it break international law if I had mash instead of rice?
