- Bamboo shoots is a nostalgic ingredient for me. Its unique taste pairs well with minced pork and basil leaves. I used preserved bamboo shoots. If using fresh bamboo shoots, be sure to boil them thoroughly to remove its bitterness. Enjoy! Ingredients & Utensils ↓

Hello Ino Dela Cruz, thank you for the reply. Yes, having fresh bamboo is the best! Just boil and eat with somtam. Very delicious.
My sister told me that she would cut the stinky bamboo to the desired thin slices and wash it under running water for 3-4 mins. Then she would blanch it in hot boiling water for 2 mins, and then wash it again under running water for another 3-4 mins. Then she would squeeze the water until the bamboo slices are dry before cooking. It may not completely get rid of the stinky smell, but hopefully reduce it to a tolerable level. Hope this helps 😄

Blanch the bamboo shoot for two hours?
@Ibodnano. Yes, if using the bitter type of raw bamboo need to boil it for at least 1.5 or 2 hours to remove the bitterness of the bamboo. However, there are sweet type of bamboo, that can be used right away after blanch it for about 1 -2 minutes.
