    In my place we eat smaller bamboo shoots and its a favourite. We don,t farm them they grow wild in the bush. When comes its season we just go and harvest.

    TAAMAA ( तामा) what it's called in Nepal 👍
    You get fermented bamboo shoots in most Nepali kitchens. These are normally harvested during monsoon. Some are cooked fresh as a curry while some are left for fermentation which could be used later on as a soup. The fermented soury taste makes it a good dish during cold weather 🙏

    Bamboo shoot is Rebung in Indonesia. I like Lumpia Rebung origin in Semarang, Central Java. You must tasted it, very delicious 😋😋😋

    It's season time here for us to harvest Bamboo shoots,, but we only do it by hand,,, no machine nor demands from markets,,, its just our tradition here in Nagaland

    Bamboo shoots is Naga best cuisine since forefathers in NE india. May be chinese R also using it as their daily part of food.. At first the old man is trying to cleansed the bamboo shoots not as U had stated.. After properly cleaning only he boiled in hot hot water for hour to softened the bamboo shoot, there aftet he teared it into pieces and some portion are used for curry and some fermentation processed. Ok. Learn more about it.. 😊😅

    But the bamboo shoots are still extremely small. Isn't that a waste? I've seen many videos of harvesting bamboo. But they don't take the very small ones, but when they are 50-80cm high, and therefore much more productive.

    The shoots are way too young and short. Here in Nagaland,India, we harvest the shoots when its about 1-3 feets above the ground. In that way, the shoots become easy to remove its cover.
