Pesto Miracle Noodles // GLUTEN FREE, OIL FREE & VEGAN

  • Pesto Miracle Noodles | GLUTEN FREE, OIL FREE & VEGAN
    Serves 2
    1/2 avocado, pitted
    4 cups arugula
    2 cloves garlic
    1 tablespoon nutritional yeast
    1/2 teaspoon sea salt
    1 tablespoon lemon juice
    1 packet Miracle Noodles or Smart Noodles
    Garnish: cherry tomatoes, arugula, nutritional yeast
    salt and pepper to taste
    Add the avocado, garlic, nutritional yeast, sea salt and lemon juice to a food processor and process until smooth. Set aside.
    Open a package of Miracle Noodles or Smart Noodles and rinse well in your sink. Bring a pot of water to a boil and cook the noodles according to the package directions. When the noodles are done, drain them in your sink in a colander and then transfer the hot noodles to a mixing bowl and add the sauce (as much as desired).
    Divide the dressed noodles into 2 bowls and garnish with fresh tomato, nutritional yeast and fresh arugula.

    Interesting, I've never heard of the Konjac plant before this, which is the ingredient in Shirataki/Miracle Noodles. IMO calling this pesto with no basil is pure blasphemy. I'm fine with subbing out cheese/nuts but come on, basil is literally the star in pesto and you just axed it out of the recipe yet still use the name. Blasphemy I say. I love the arugula for a spicy kick and avocado for creaminess. However as far as replacing the cheese you should know according to Dr. Stephen Cabral as well as Anthony William, author of the bestselling Medical Medium book series, Nutritional Yeast has the same chemical structure as MSG and is a known neurotoxin.
