Can I do an an overnight cold rise in the refrigerator with the dough? Or would I need to let it rise for a few hours, then put in the fridge overnight?

Nice recipe, I will try that with some modifications, like using Rye Sourdough starter, a part wholegrain flour to two parts pastry- & Breadflour, adding bourbon vanilla to the dough-mix & using a bit less sugar (but toasted cane sugar).
If it comes to the Cinnamon I'd go for the higher quality but more expensive Ceylon-Cinnamon instead of using the cheaper Cassia-Cinnamon.
It also would be interesting to laminate two different kinds of dough, a brioche-dough like it's typical in this recipe & a high hydration bread dough to get more variety in texture, but I guess those two different doughs also bakes very different fast. But I think It's fun experimenting with this recipe.
Also what I guess is that the higher the fat content is, the denser & heavier becomes the Kanelbullar, but fat also adds flavour & texture, while less fat in the dough & higher hydration will make the Kanelbullar crunchier, like a bread, but they also would need to bake longer. But I just should start with your ratios and change them if I bake Kanelbullars again.

That would technically be a "kanelsnurrer", as these kanelbullar are cinnamon rolls technically + not cinnamon swirl/twist
