I really miss Jack! He put New London on the map. I was hoping to someday take a trip to New London and try to hang out with Jack and the crew. He had a wealth of knowledge and experience. I learned a lot from how he handled himself in the kitchen. He was a very charitable man. He loved Lakisha, his family, and Bee. Today, out of tribute to Jack, I bought his apron and I will take good care of it and wear it with pride. I hope when I host a gathering that my guests will ask me about Jack and I will be happy to tell them all of the things that he meant to me. My sympathies to all who love Jack and I share your grief.

OMG - I just watched this video tonight, and came here to ask Daddy Jack what skillet he used in this video only to read some of the comments and find he's recently passed away! This is so sad and I can't believe he's gone. I recently told my wife that it's on my bucket list to eat at his restaurant and shake his hand - maybe even sit in on an open mic night... Jack, You asked for an update on my corn beef hash adventure, so here it is. I bought almost 2 pounds of corn beef from a supermarket deli. Then I checked my copy of the Joy of Cooking for guidance on spices , but that's all I did. I boiled a couple of Russets and a few carrots and let them sit in the refrigerator for a couple days. I looked at some other recipes on line for ideas and wound up adding celery,red peppers, rosemary, chives ,and parsley, and bacon fat because the corn beef was very lean. I did a fine dice of everything, except the beef, with a food processor , and it came to six and a half pounds. I just now finished a plate of it for lunch and it was awesome. Thanks for the inspiration. BTW, I'm probably going to be up in Worcester in late August or early September. If all goes well, my granddaughter will be graduating from the WFD fire academy, and I cannot miss that not only because of family pride, but because I'm a retired Shrewsbury firefighter. My point is , if the restaurant is open, I'll stop in, either going to Worcester or coming from there on my way back to Cody, Wyoming, where I now live.

@@CookingWithTheBlues , In 2004 I went on a solo motorcycle trip to Alaska and back. I went from Worcester to Ogdensburg, NY, where I crossed into Canada. I made my way to the Yukon and crossed back into the U.S. by ferry at Dawson and the Yukon River. After touring the state I returned by coming down the hight of BC, getting into Washington a few miles east of Vancouver BC. I came down the coast to Newport , Oregon and headed east on US Rt. 20. That brought me through Yellowstone National Park and Cody,Wyoming. I kinda like the place so with a little encouragement from my sister, Insold the house in Worcester and moved here in 2005.

Looks like a fantastic hearthy breakfast, to start a cold winters day, or a good lunch on a working day! If you're not a fan of poached eggs, or find them hard to get right, just break 'm over the hash right before serving, or separate them first, stir the whites through the hash, and then just put the yolks on top just before serving, so they're still nice and runny!

I live in the South and you can't find corned beef hash anywhere in my City except the nasty canned stuff at the store. My Mom used to make it and it's one of my favorite dishes.
