I just wanted to put my input on it, I know this is months late -- It’s not that odd seeing as how they will become soft when cooked, which they are cooked in most, if not all of these recipes Hard peaches are good just by themselves, it’s all dependent on the flavour and/or texture profile of the peaches you use. If it’s a sweeter peach, even if it’s harder one, It can taste really good! :D

When dealing with peaches that are going to be cooked to a pulp, it's best to blanch them first, get the skins off, cut slits into them (don't worry about removing the pit yet), then boil them until they're somewhat softened but not a pulp. Chill them, then pull the pieces off and discard the pit, then either finish cooking them (if needed) or just throw them into a food processor or a blender and pulverize them as needed for the rest of the recipe. It's not necessary to try to cut whole pieces off of the peach, and it's not wise to leave the peels on either. The hairs don't cook all the way down and can cause all kinds of throat and digestive problems. Something else you can do differently is to dip the cookies in the food coloring (cherry juice works well for this), then dry them individually on a cooling rack over a baking sheet (to catch any drips), then fill them with the peach filling and put them together. It would look a lot more professional that way. The other thing you could try is replacing some of the liquid ingredients in the cookie dough with extra peach mixture, which should also lend some color to the cookie dough.

So, peaches here, even white fleshed ones, are very soft with lots of juice. Are these peaches unripe? Is this some varient I am not familiar with that is flavorful without softening? If not, do you have a reason for using unripe peaches? It's not just this channel, every baking channel I have seen in Japan and Korea uses these hard peaches. It seems odd to me.
I also thought that was pretty odd -but I think those are nectarines. They're still technically a kind of peach, but they're not the typical kind of peach when we think of peaches. Might just be they don't call them nectarines in other countries, they just refer to them as peaches.- Actually I could be wrong. I have no idea why those peaches look and sound so hard. Maybe they're frozen?
White peaches are mostly a china/korea/japan phenomenon. I tried to acquire them a few times after coming back to the states but I was only successful in a few hyper asia centric markets.
These are the only ways I will consume a crunchy peach😂🍑Matthew likes the crunchy peach because of the nectarine flavor they have . Which I do like the flavor but I prefer my peaches in between ripe& overripe
Years ago I was subscribed to a channel that I liked a lot for its asmr-ish bread making style where she had the dry stuff on a board and made a well in it to pour the wet ingredients in. I still slap and knead my bread by hand and add the butter in after like she did + poke the dough... The technique was so specific I've never forgotten it even though I stopped watching for a long time. I remembered the channel for the first time again recently and tried to find those videos but couldn't :') I didnt think for a second it could be this channel because it seemed too new and some thumbnails and iconic videos are gone or different, but the video editing and baking style are too similar. Could someone please confirm if she rebranded or something? I remember the editing always being amazing but it still feeling endearingly amateurish whereas this channel is more polished and almost corporate feeling(?) Which isn't bad; if shes thriving I'm glad ^^ just curious if anyone knows the channel I used to know and if this is the same person.

Unfortunately you can't really get these in America. You may find some in a few Asian stores, though. But generally they're only in Korea and Japan.
