- Kye is back in the kitchen to show you how to make, boil, bake, and top your very own Cinnamon-Sugar Crunch Bagels. This recipe is our best attempt to turn that crispy chewy sweet bagel you know from Panera into a homemade delight. A riff on our 2022 Recipe of the Year, Ultimate Sandwich Bagels, these bagels are topped with a sweet cinnamon mixture before they’re baked, forming a crackly, craggy crust - and filling your kitchen with a cinnamon bun aroma in the process. The addition of Cinnamon Sweet Bits in the dough itself hammers home the cinnamon flavor, while coarse sparkling sugar in the topping contributes to the extra crunchy texture.

I worked as a baker at Panera for almost a year. The bagel dough comes pre-formed and prepped, already in a bagel shape but smaller.
We take it out of the fridge, let come to room temp for an hour, and then using 2 fingers with each hand we rotate the bagel and lightly stretch it so it’s a wider bagel shape. Then a dip in any toppings, Then it goes to proof until ready with a spray of water.
The cinnamon crunch bagel and the discontinued sprouted grain flat were the only doughs that we pinched the hole closed on purpose! It’s not supposed to have a hole, it keeps the toppings better that way.
Also, the cinnamon crunch topping is the same topping used on the tomato basil bread. Both insanely delicious. Looking forward to trying this recipe and enjoying the bagel without all the additives Panera uses.
Also, none of paneras bagels are boiled!

I bought the KA cinnamon bits but forgot the crunchy sugar. Would Demerara sugar work? And isn't salt in the pâté fermente detrimental to the process?

yours look exactly like Panera Bread’s cinnamon crunch bagel. I used to love eating these until I realize the level of sugar I consume on a daily basis. But they are super good though.

Hi Kye, I've wanted to make these since I first saw the recipe on KAB. I finally made them and they were great. I definitely viewed the video first. You had me laughing which is always the best way to start baking. I do have a question though. What would be the best way to store these. I'm submitting them into our local fair and I need to bake them the day or two ahead of taking them in. I want them to be the best they can be. Thank you.
