But on further reflection, I think I understand the subtle genius of it. Processed cheese slices are best thought of as like a sort of pre-portioned mild cheese sauce. You already have two bold and punchy flavours in there with the beef and the onions. Three would be a crowd, but something mild, creamy and gooey is the way to marry the two strong elements perfectly. I'd have messed this up by going OTT the cheese!
