Michelle Bridges recipe - Vegetable & Tofu Curry

  • Vegetable & Tofu Curry by Michelle Bridges
    Serves 4 people
    Ingredients:
    Oil
    150g tofu
    ginger
    garlic
    brown mustard seeds
    1 table spoon curry powder
    veg stock
    500g pumpkin peeled and cubed
    1 carrot diced
    200g cauliflower
    150 g green beans
    ½ cup greek yoghurt
    METHOD:
    Fry tofu till golden. Set aside. With more oil add ginger, garlic, mustard seeds and curry powder, cook add stock simmer, add pumpkin carrot cook for 10mins add cauliflower and beans for 5 mins, add tofu for 5 mins. Remove from heat and stir in yoghurt.
