Goan Xacuti Masala | How to Make Xacuti Masala | Indian Masala | Goan Cuisine | Cooking Addiction.

  • A traditional favourite in Goa, India Xacuti is well loved and for good reason. Meat, Chicken, Fish or even veggies are simmered is a blend of aromatic whole roasted spices like red chillies, cumin, fennel, coriander, cloves, poppy seeds, cinnamon, cardamom & star anise and blended with turmeric, roasted onion, garlic and coconut. This masala or spice paste can be made ahead and stored till needed.
    Ingredients & Method
    Dried Red Button chillies - 6 - 10
    Ginger - 1 inch
    Garlic - 5 Cloves
    Coconut (Grated) - 1 medium sized
    Onion (Chopped) - 1
    Cloves - 3
    Cinnamon - 2 inch
    Black Peppercorns - 1/2 tsp
    Poppy seeds - 1 tbsp
    Whole turmeric - 1 inch
    Mace - 1
    fennel seeds - 1 tsp
    Nutmeg - 1/4 tsp
    Green cardamon - 3
    Star anise - 1
    Corriander seeds - 1 tbsp
    Water 30 ml
    Coconut oil - 1 tsp
    Method,
    1) Dry roast all the spices till you get nice aroma out of it.
    2) Fry Onion, garlic & Ginger with 1 tsp of coconut oil till slightly changes its color.
    3) Roast the grated coconut till it turns slightly turns golden brown, let it cool for some time.
    4) Place all the roasted spices on the grinding stone and start grinding it using water.
    5) Then add the fried onion, garlic & ginger and continue grinding.
    6) Finally the roasted coconut and grind it into fine paste.
    7) If your using mixer you can add all the roasted ingredients together and grind it into fine paste.
    8) Button chilies are slightly spicy so if your'll don't like spicy, use only 6 chilies and if your'll are not getting this variety your'll can use kashmiri chilies as well.
    9) This masala can be used with meat, fish and vegetables.

    Grinding masala on stone itself is a testimony to it's authentic goichee rooch and then cooking it in earthen pot on firewood..yum yum😋

    I had a grinding stone at my mom's place, cannot replace the flavours ground on a stone with that of a mixer.

    Suggestion- if you could mention about chicken/mushrooms at what time to add as chicken takes longer time to cook. For a beginner like me, all those details have to be in my mind before blowing off moms kitchen and eventually the thought of I can cook!

    Is this masala only for one time use,as you have added water while grinding.What about making half kg Chicken Xacuti Dry masala,in a mixer and keep for use in bottle,to add only one tablespoon with coconut,garlic,green chillies and ginger.Can you then tell me how much of each spice would be required and while making dry masala do u add roasted coconut,garlic and ginger or can u add afterwards while grinding to prepare curry.Do you have to add cumin seeds also,have you forgotten to mention,Pls reply

      fry onion and tomatoes for few minutes and then add the masala and cook till the rawness from the masala goes away, then add your main ingredients that's chicken or mutton.

    While preparing chicken xacuti do I have to add green masala too to the chicken I mean coriander leaves ginger garlic green chilli paste

      Thats totally optional. You can just marinate chicken with salt, lemon juice & ginger-garlic paste. Here's the recipe.

    You sure that was half a teaspoon of Black Peppercorn? Looks like you either have a very large or overfull ½ teaspoon measure because there were around 40 peppercorn. A regular ½ teaspoon measure holds a maximum of 26-28 peppercorn.

      You can skip it as well because i added anise seeds which will give required flavour to the masala.
