I used to work at Taco Bell in the 80's. The way we cooked our beef was cooked the raw beef first until brown. Mix the dry ingredients with water. And add it to the beef and cook until done. And lastly, drain the fat. We used coconut oil to fry the flour tortillas lightly instead of vegetable oil. But it's a good substitution. The sauce was similar, and texture to picante salsa, like Pace. Looks delicious.
I'm making these again tonight and I will try the coconut oil. It will probably impart a certain flavour, but I always felt vegetable oil wasn't quite right. I was thinking of using lard or shortening, but coconut oil has the same texture at room temp, so I bet it works great. Thanks for the info
Thank you for recreating one of my two favorite items that Taco Bell used to have. The Mexican Pizza and the Encharito. I always ordered both for the different textures. Made this today and everyone went insane how good it was, especially my hubbie. I added some thinly sliced Serrano chilies, as everyone loves things hot here, and cubed some pieces of avocado, added after the pizza was out of the oven. Thank you!!!! I used to live in Tucson where Sonoran style cooking is king, and TBH, this nice quick meal is as satisfying as my labor intensive Carne Seca Machaca tacos,burritos, and chimichangas. Avocado crema is very nice drizzled on top as well. At 72 y.o. I'm sort of winding down my time standing all day in the kitchen, so this recipe is a keeper. I am most happy when cooking for my family.

Thank you for a great video. The pizzas look delicious. It is now August 2023 and Taco Bell still has not brought back the Mexican Pizza or the Enchirito. If they ever do, I could once again become a customer. I think my last trip to Taco Bell was prior to 2007.
I tried this recipe this week and it is very good! I was quite surprised at how quickly the tortillas crisp up in the oil. Maybe 1 minute? Maybe my oil was too hot? 🤔 I only ate one pizza in that it has a lot of material. Great recipe! A keeper.

Thanks for posting this video. Here are some thoughts you might try some time if you're bored... 1. soften 1/2 an onion (sliced), in oil over medium heat, then warm the spices in the same pan w the onions. (I don't use the onion flakes and garlic/onion powders, but definitely add 1.5 tsp each of corriander and cumin). stir constantly, once the spices start to get aromatic, THEN add the ground beef and stir well to get the onion/spice distributed all over the meat. 2. When you put the canned refried beans in the pot, add 1 or 2 tablespoons of salsa and 1 or 2 tablespoon of water. This will help it cook more evenly and be less pasty when you go to spread it. Leave the beans on low for 10 minutes to really loosen them up, stirring often and add about 50% more water than you think you need to keep it from getting pasty again. Don't worry about adding the water, at TB they add LOADS of water as the pans of beans dry out to keep them soft. Otherwise they dry out quickly. 3. The sauce TB uses is 2/3 canned enchilada sauce and 1/3 chunky salsa 4. TB uses CORN tortillas for this dish. Flour is too fragile while corn can stand up to the spreading and pushing of the ingredients. It also won't get as soggy as flour. Hope you get to try this twist

Try using the low-carb tortillas, they are thinner. Taco Bell used thinner enchirito tortillas to fry for their pizza shells which as far as a can tell nobody makes for grocery stores.

I make my mexican pizza tortillas in the air fryer. So crispy & good. It takes a little practice and making sure to weight them down but omg so good.
