Ive purchased Katzs pastrami on line a number of times. I used to live around the corner back in the day. You dont have to buy a whole pastrami.they sell in one pound presliced packs. Its all good though. Got an order in at the moment for a birthday dinner. cheers!
Yeah, but if you buy a one-pound pack, the shipping costs are the bulk of the purchase price. Better to get more and have shipping costs comparatively lower.
Making mine now and came here to hopefully see someone demonstrating the cooking process just like you did. Great job. I got the mustard and pickles too in my order and rye bread from Trader Joe’s. I can’t wait for lunch.
Yeah. It makes a lot of sense to get you a ribrate from somewhere else, because cats's ribrad isn't anything to write home about. On the other hand, their pastrami is.

I took a trip to Katz for the first time a couple weeks ago; Connecticut was our actual final destination but my husband and I were on a foodie vacation and had to put Katz on the list and make a pit stop. And as much as we have traveled to NY I was kicking myself for not going before. Needless to say it left such the great impression that we had to get it shipped!
I didn’t know they had it raw. I got mine pre cooked and cut, in a vacuum sealed bag. Either put the bag in boiling water or remove it from the bag, and use a pot with a metal calendar to steam it.
I don't have an instant pot, but I do have a pressure cooker. I've cooked brisket in that before and it comes out falling apart yummy! When we cooked it on the stovetop, it tasted just like it does at the restaurant, but I will try the pressure cooker next time.

We just followed the directions that came with the package. Great to hear you got yours! To check for tenderness, you can gently poke it with a fork or your finger; it should give slightly without being mushy.
Cooked according to the instructions, and cut against the grain like it's supposed to be, it is spot on. In this video, Young did not cut against the grain, but when it was over, we cut the rest properly, and it was great! The thing about Katz's is that the bread is nothing special. Any rye bread and any deli mustard will do. The pastrami is the star!
Sorry to say but you cut the pastrami the wrong way. It was supposed to be cut AGAINST the grain of the meat, you cut it with the meat grain. Cutting against the grain makes for a much more tender texture.
DON'T! ruin your pastrami by plunging it into a pot of water! Boil it in the vacuum bag OR divide it and boil one portion in a vacuum sealed boil safe bag.
As a cook, it seems whoever wrote those directions to heat the pastrami was smoking meth. #1. Place in a large pot of water, then remove from packaging?? Boiling a seasoned piece of meat in water for 3 hours is going to make a flavorful broth and a very weak piece of meat. It appears the meat is fully cooked in the cryo. All you needed to do was heat it and serve. Boiling a piece of beef for 3 hours is called “braising”!!! 😂😂😂 As someone else mentioned, sous vide, then perhaps steam it for a few minutes till ultimate tenderness. You don’t need to cook all 4 pounds at once either. How much are you eating in one setting? Anyone watching this video please take note. Boiling meat for 3 hours is the last thing you want to do to a $150 piece of meat!
All I can say is that it wound up turning out almost like it did at the restaurant. So, meth-head or not, if I can't make it to NYC, I'll have it shipped and go by the directions that Katz's gave us.

The Katz presliced pastrami should be cooked in the packaging.The Katz's WHOLE pastrami is supposed to be taken out of the package and boiled for three hours. It is first pickled, then they add a rub and smoke it. Then ship to you for the last step of boiling. That is how they do it in the deli, those are the instructions I recieve in the shipment and their cooking instruction video. Comes out perfectly. No loss of flavor. I have one on the stove now 😊.

I put mines in the instant pot for 1hr and it was incredible. You should try that next time.

It's been awhile, but I think we just took it frozen, put it in the water, and started cooking.
Can you steam it in the bag?
We never tried, but I don't think the directions say that you can.
You can also reheat those which are already cooked and sliced.

It's been awhile since I did this, but I think it comes in smoked and prepared, but it still needs to be cooked.
You can get it already cooked and sliced. They put it in vacuum sealed bags

That might work, probably worth a shot. Those were not the directions on the packet, but I don't see how sous vide could hurt.

There seems to be quite a debate on this. Maybe we should get two of them and cook them each way and have a taste test comparison.
