Sir, Thanks for the video. The recipe misses these 2 important steps - vilayichathu. This coats adai with sugar and helps with pink color. 2. Cashew topping is usually tamilnadu style. traditionally Idhuku panna maata. Not sure if this was intended as the VB touch. Wanna try if thats the case. A comment wanted to add was that traditionally adai is made by putting rice paste in the back of vazhai elai and add that to boiling water. I love your recipes and always love and respect the VB touch to all the recipes. Felt this could have been researched more.
Iam from kerala.Sir this small squar ada is not used for making ada pradhaman. It used only for making palada pradhaman. We use big square ada for ada pradhaman.
Traditional making of adai is as follows. Raw rice grinding very smooth paste. Add two or three spoon khee mixed thoroughly. In plaintain leave the rice batter should be put very thin and roll the leave. Two end should be tied with plaintain fibres as to not come out of the leave. Put all the tied leave into the boiling water cooked. After cool down the leave are opened cooked adais are brought down in the water. Adai are cleaned thoroughly in the water collect them. Adais evenly chopped. Afterwards used in the prathaman. Lots of work. Only nowadays ready made adai available in the market.

Actually traditional palada pradhaman is made using milk, sugar & adai only. Some people will add butter at last. No cardamom powder & cashews raisins used. Palada la nalla sundina paal taste matum tha varum. Colour pathale light pink colour la varum. Very time consuming payasam. Readymade ada available in market. If u use adai using red raw rice it will be too good. Maida adas are also available in market.
