As a chronic pain sufferer, cooking is always a challenge. But eating healthy is definitely a priority. I'm also on a tight budget. So what I'll often do is prepare a large meal when feeling ok, and making sure it can be eaten warm and cold for 2-3 days, with slight adjustments if I like (adding nuts, frozen cooked veggies etc). But on worse days, I try to prepare more for of a simple dinner so that it can be my lunch the next day as well. So for example; yesterday's warm carrot+rice with bean salad is today mixed bean + rice salad for lunch.
I like what I ate in a day videos! I always get some inspiration from them, sometimes even for some new recipes, derived from what I see. This video is even better, because it's about all of you :) And for breakfast I just had a smoothie, with cantaloupe, strawberries, oats, hemp hearts, peanut powder and soy milk :) Maybe sounds a bit weird, but it was tasty :)
Please do more of these! It's so interesting to see what you each eat. It definitely gave me some food inspo :) Btw: For breakfast I had puffed kamut cereal, topped w/ mango, blueberries, cinnamon, & unsweetened vanilla flax milk.

Nicole, your dinner is the absolute BOMB. Leftovers + leftovers + leftovers + seasonings = my speciality. Plus, your plate is so full, which is just how I like my plate. And I like how you guys use up your veggies instead of wasting. My breakfast today was leftover supper from yesterday: green pea, lentil, 2-veg and pasta soup with crispy warm ciabatta bread. (The soup itself was also made from use-em-up veggies.)

I had oatmeal with chia seeds, banana and cinnamon sugar. My snack was a trail mix I made with purely Elizabeth chocolate granola, spicy chili pistachios, walnuts, pumpkin and sunflower seeds. For lunch I had a macaroni salad with vegenaise, onion, pepper, celery and broccoli along with one gardein porkless pocket. Still deciding on dinner but this video made me so hungry and accident to make something delicious! 😋

My favorite cheese is the good planet smoked cheese, it has all the salty smokiness that I liked from bacon but it's not. Paired with toasted bread, avocados, lettuce tomatoes and sprouts, and it's one of my all time favorite meals!
For breakfast I had a sweet potato, cooked in the microwave for 5 minutes, topped with some hummus+lemon juice+mustard as a dressing. I know it sounds weird but it was great! Oh also a pear :)

With all those sandwiches it got me craving a TLT from a little pub in Cincinnati called MOTR. Idk what they do to the tofu but it’s super bacony and the chipotle mayo on top really makes it

I can't believe what a great idea it is to switch out the aioli for hummus in that sandwich from Whole Foods! I haven't tried it yet, because I was so overwhelmed by how much they only they put on it the first time I had it.

Can you do a video on fast food vegetarian/vegan meals/options? I’ve been vegetarian for 7 years and I still have a hard time going out to eat or ordering fast food and finding something that’s vegetarian/vegan friendly.

I've had that Whole Foods TLT sandwich before, and it does taste good - but once I looked closer at the label, I realized that it's quite high in saturated fat. Lots of sugar for breakfast! Great recipes for lunch and dinner, but I do not eat sweets for breakfast, just for the weekend and then for dessert. Could you make a video about healthy breakfast?
I just eat naturelo whole food vitamins and Huel gluten free unsweetened powder all day. If I want fresh food, I'll get a bag of carrots or eat weeds in my garden (like dandelion, chickweed, etc.). Sometimes I eat other food, but I prefer not to - as I have food sensitivities, since I have a neurotoxin free, environmental diet, I don't take chances. I'll make a post one day to say what that is.
I wish my closest Whole foods ( 1 hr away) had the ttla 😭 i still have yet to try kimchi , i need to just woman up and try that kimchi avo toast lol and nicole & hannahs dinner looks so up my alley! I made some carrot juice for breakfast this morning. Quick and easy, just chopped up about 5 organic carrots and put them in my Fusion Juicer.
