    After you "adjust stroke weight when scaling" (around 3:16, and which is not visible in the tutorial), your image will increase proportionately from the center, but my image was increasing from the left margin and creating a non-symmetrical image. I don't know how to rectify this..

      You need to change the proxy point. You can do that using either the control bar or the Transform panel. There will be a small gris, 3 dots high by three dots wide. Click on the enter dot. That will change your proxy point and then your shapes will grow from the center.

    Also, I am unable to get the increased images to show up. I am only seeing the increase in my original image.

      Oh, but if I make sure that I have copied and pasted in place, I get the new image. Still, my image is not increasing from the center, and I cannot figure out how to do this.
