Steps to Disable Keyboard Touch Sound. Go to the Settings. Go to the “Additional Settings” then tap "Keyboard & Input Method". Tap Gboard then Preferences, scroll down and turn off “Sound on keypress”.

I came here for the same reason. The key press sound is enabled however no sound is made when typing. I've tried default volume and played around with different percentages but nothing works. I tried switching back to my phone's original keyboard and the key press sound works just fine with it but I much more prefer the Gboard.
