Gobon tal-hakk is grated cheese. I like to add this grated cheese along with some eggs so that the mix will bind perfectly.

Yes its very popular with Maltese
The eggs are required for the simple reason that after you mix the pasta and the sauce you put one or two raw eggs with the mixture so that when the pasta is put in the oven it will stick together. Anyway, congratulations on your videos about Malta I enjoy watching them.

Cooking this tonight in very cold Melbourne, the corn beef can had a key to open which I hadn't seen before. I added alot of garlic and parsley and threw 2 eggs in and cheese in between...yum yum..Could not find Ziti pasta so used Rigatoni

Honestly I thought that your version being so different to my mums traditional recipe was going to be crap, but I gotta say you achieved a great crunch without eggs, and a substantial meaty looking sauce. I loved the idea of mixing the corned beef with the mince because I can’t stand the taste with the mince alone. I’m definitely going to give your version a go as it’s handy when I’ve run out eggs and can still get the crunch.

A maltese lady told me once you open tomato 🍅 conserver that’s in a jar and don’t use it all, top it with olive oil, put it in the fridge to prolong it.

Good cook Steve, loved it. I cook it with minced beef mostly and I do add curry too. I like to add eggs with the cooked pasta and then the meat sauce altogether. I want to make this great dish with corned beef too. The crunch on top is so good, definitely a must for me and cheese before it goes in the oven. This is my way👍😀

I have heard that Maltese people like to put curry in to just about everything at home, even things that are not known to have it. Maybe more so in the past.
To make it crunchy at the top we us broil at the end, or a brick oven could be used, which is how the Maltese restaurants used to bake it. It's all about higher heat.

Great effort Steve ! Well done ! This is my favorite pasta bake and I always get the thumbs up from my family and friends. So the things I do differently are these. It is imperative that the onions should be diced not sliced and two tea spoons of curry and mixed spice must be added to them, not added after you add tomato pulp. ( for a dish of 4 portions ). Mince is better if it is mixed ...half pork half beef. Also add l little piece of liver tac-canga...( about a 100 grams ...size of a medium potato ) and it must be very thinly diced. Generous amount of salt and pepper will give it an even more kick. Dice 2 hard boiled eggs and add to the mixture. Then 3 beaten eggs will be added prior transferring mixture to the dish. Top with grated cheese of your choice and a minimum of 40 mins, 180 degrees, is the norm for the common Maltese Imqarrun il-Forn !

Great job! Been eating it all my life. Now I use pork and beef for the meat. In Gozo my family would really burn the top. Extra crispy!

I make similar for myself with corned beef but no eggs. Could smell the onion when you were frying it. Looked tasty Steve. Xx

I think your recipe was ok and the finished product looked good. We like the italian mixed herbs from Malta but we have run out because of the virus, must stock up on all the local seasonings on our next visit.

That black soot is mold that grows between the onion skin... It can be easily washed away and usualy it is on the outer layer... If you keep the onions in a humid place.

I always in sauce make curry while frying and when you mix the pasta and sauce mix the eggs too timpana is the same but with the dough

Great try! Here are some tips: chop the onion finely for the sauce, I usually use ground beef for the sauce, you can add some red wine instead of the curry, it will give the sauce a lovely rich taste. I use thyme and oregano, I find these work best with a tomato sauce and beef. I usually mix 1 tbsp of kunserva with around 3 Tbsp water before throwing it into the mix. You can add a teaspoon of sugar to minimise the sauce’s acidity. Then you can add some diced aubergine and frozen peas to the sauce mix. Also a chopped hard boiled egg if you like when the sauce is ready and you remove it from the heat. When you cook the pasta separately, remove it from the water a few minutes before the recommended cooking time as it will continue to cook in the sauce in the oven. And yes an egg to bind it all before it goes into the dish and into the oven with some grated kefalotiri cheese on top!

I prefer "beef & pork" mix and no corned beef. Steve, I'm sure you enjoyed it, even without the EGGS 🥚 🥚 🥚 (to bind it) 😂. FYI : That black stuff under onion skin is bit of mould. "Kunserva" = Tomato puree. Pasta water (cold ☺) is VERY good for your pot plants 💦 🌿.

Maltese Imqarrun il-forn needs eggs to stick and not remain loose. It's what oven baked pasta generally means. Why don't you try it again? Same approach for Ross il forn...same foundation, just play around with the extra ingredients. The taste will change with eggs as well. There are some variations where you can mix beef minced with bacon and perhaps throw in some chopped hard boiled eggs. You could add ricotta or fresh cream (those small benna cartons) instead...the texture and taste are nice. I would not throw in corned beef however.

ours is rasher of bacon, and yes corned beef, ( or mix with mince beef) onion ( not even garlic) tomato sauce and bayleaf, tot of wine at most, not even kunserva. Beaten eggs and some add cheese. Try this version sometime. Yum yum.
