    【Ingredients】
    Chicken thigh cubes 600 g
    Chinese green onions (white parts) 2-3 pcs
    Sake 2 tbsp
    Salt 1 pinch
    Pepper 1 pinch
    Bamboo skewers
    Cooking oil 1 tbsp
    [ Yakitori Sauce ]
    Soy sauce 2 tbsp
    Mirin 2 tbsp
    Sugar 1 tbsp
    Sake 1 tbsp
    【Steps】
    1. Separate the green onion whites from greens. Section the white parts into 3 cm pieces.
    2. Cut the chicken thighs into bite size cubes.
    3. Marinate the chicken cubes with sake, salt, and pepper. Massage well and set aside for a few minutes.
    4. Assemble the yakitori skewers by alternately piercing the chicken cubes and green onion pieces, ensuring the chicken is firmly rolled before piercing through the sticks.
    5. Prepare the yakitori sauce by mixing sugar, mirin, sake, and soy sauce until the sugar is fully dissolved.
    6. Heat a skillet and add 1 tbsp of cooking oil.
    7. Place the yakitori skewers in the skillet and sear over medium-high heat for about 4-7 minutes on each side until golden.
    8. Remove the skewers from the skillet and set aside.
    9. Pour the yakitori sauce mixture into the skillet and bring to a boil. Reduce until thick and sticky, being careful not to burn it.
    10. Glaze the skewers with the yakitori sauce.
    11. Optionally, serve the yakitori on a bowl of fluffy rice and garnish with shredded seaweeds to make a yakitori donburi
