Chicken Shrimp Meatball [For Meal Prep]

  • (Make 3 servings. Per serving: 340 calories (meatball) + 70 calories (1 cup of light dressed salad/any greens) = 410 calories)
    Tasty and healthy chicken and shrimp meatball. Ready for your meal prepping.
    Ingredients
    • 150g peeled shrimp
    • 300g minced chicken
    • 2.5 slices wheat bread or bread of your choice
    • 1/2 onion (diced)
    • 1/2 cup spring onion (chopped)
    • 2 eggs
    • 1 tsp salt
    • 1 tbsp soya sauce
    • 1/2 tsp sugar
    • 1 tsp pepper
    • 1 tbsp oyster sauce
    • 1 tsp sesame oil
    • 1 tsp minced garlic and ginger
    Directions
    1. Grind bread into desired roughness. This is a healthy substitute to plain flour
    2. Grind all raw ingredients together with all spices
    3. Mix grind meat and grind bread with diced onion, spring onion, and eggs
    4. Form into a meatball (about 1-1.5 tbsp) and oven cooked it for 200C 20-25 minutes
    Serve with any 1 cup of light dressing salad or greens you want.
